A tasty cake from Taste of the Caribbean. Posted for ZWT III. This cake is nice, but ended up a bit dry when made according to the original recipe - I reduced the amount of flour a bit and baked it for a much shorter time - may have to play around with it a bit more.

Number Of Ingredients 14

1 cup butter, plus
2 tablespoons butter, softened
1 1/4 cups caster sugar
4 eggs
3 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt (optional)
3 large tart apples
1/2 teaspoon cinnamon
3/4 cup brown sugar
1 cup flour
1 teaspoon cinnamon (I added some allspice and cloves as well)
1 cup shredded coconut
1/2 cup butter

Steps:

  • preheat oven to 350.
  • grease a 10-inch round cake pan.
  • To make crumble topping:.
  • mix the sugar, flour, cinnamon and coconut in a bowl, rub in butter with fingertips till mixture resembles bread crumbs. set aside.
  • put the butter and sugar in a bowl and cream with an electric mixer till light and fluffy.
  • beat in eggs, one at a time, beating well after each addition, adding a little of the flour if mixture begins to curdle.
  • sift in half of remaining flour, mix well, then add in rest of flour and stir till smooth.
  • Peel and core the apples, then grate them coarsely. Place the grated apples in a bolw and sprinkle with cinnamon, and set aside.
  • spread half the cake mixture evenly over the base of the prepared pan.
  • spoon the apples on top and sprinkle over half the crumb topping.
  • spread the remaining cake mixture over the crumble and finally top with remaining crumble topping.
  • bake for 1 hour and 10 minutes, covering cake with foil if it browns too quickly.
  • leave in pan for about 5 minutes before turning out onto wire rack. serve when cool.

Wow! This cake was very well recieved in my home. It is so good. I could just eat the topping as a dessert. It is full of apples inside and on top. It is also a nice tender cake. It is topped off with a cinnamon crunch topping. This is a cake I created from an old plain cake recipe. I changed it up by adding sourcream, applesauce, using less butter, and sifting the flour mixture. I also added in the apples, cinnamon and a crunch topping. That made it into a whole new cake! I am sure you will all enjoy this loaded apple cake! :-)

CINNAMON CRUMB
1 tablespoon(s) cinnamon
1/2 cup(s) light brown sugar
1 cup(s) flour
1/2 cup(s) chilled butter chopped up into cubes
1/2 cup(s) optional: chopped nuts (pecans or walnuts)
CAKE
4 - apples peeled cored and sliced into 1/2" slices
1-2 tablespoon(s) lemon juice ( to prevent apples from browning )
1/2 cup(s) softened butter
1 cup(s) light brown sugar packed
2 - eggs
1 teaspoon(s) vanilla extract
1/2 cup(s) apple sauce
1 cup(s) sour cream
2 1/2 cup(s) flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/2 cup(s) optional: walnuts or pecans

Steps:

  • Grease and flour AN angel food pan. Set aside. Preheat oven to 350° .
  • Topping: In a bowl. Mix brown sugar cinnamon, and flour together. Add chopped butter. Mix well with pastry cutter or 2 sharp knives. It will look crumbly. Add the nuts. Place hands in bowl. Knead mixture together until it forms almost like A dough. Break it apart until it resembles large crumbs. Place in refrigerator until needed.
  • Slice apples and toss with lemon jjuice
  • Cake: In a large bowl. Cream together brown sugar and butter . Beat until smooth.
  • Add the eggs and vanilla to the mixture.. mix well . Blend in apple sauce and sour cream. Do not beat.
  • Sift in the flour, salt, 1/2 tsp cinnamon and baking soda. Mix on low speed until blended. Mix in nuts.
  • Place 1/2 of the mixture into the bottom of a angel food pan. With the back of a spoon make batter level. Make a well in the center of the battter with spoon all the way around.
  • Place half of the sliced apples in the well overlapping in a spiral pattern. Push down on apples with the back of a large spoon so that The apples are pushed into the batter. Cover with remaining batter smooth out
  • Place remaining apples on top in a spiral pattern until gone. Place on top of each other. If you have extra Avoid putting apples on the outside and inside edges. Center the apples. Slightlty push diwn on apples iwith the back of a spoon. Sprinkle top with the cinnamon crunch you placed in the fridge.
  • Place on center rack in 350° oven. Bake for about 50 minutes, or until toothpick inserted comes out clean.
  • Remove center cone from pan after it cools for 30 minutes. Then, Cool completely. Run a knife around cake in pan to loosen cake. You may need to do the same to the bottom of the cone pan. Place platter over pan. Flip cake on platter. Carefully! Turn cake over with crumbs on top.
