2 pound(s) pork belly sliced into spare ribs size
1/3 cup(s) hoisin sauce
1/3 cup(s) soy sauce
2 tablespoon(s) each shaoxing wine, or dry sherry and honey
4 tablespoon(s) brown sugar
2 clove(s) garlic minced
1/2 teaspoon(s) each chines five spice and red food coloring
GLAZE
1/4 cup(s) each hoisin sauce, and soy sauce
1 tablespoon(s) each shaoxing wine or sherry and honey
3 tablespoon(s) brown sugar
1 clove(s) garlic minced
1/4 teaspoon(s) each chinese five spice and red food coloring

Steps:

  • Mix the hoisin sauce, soy sauce, Shaoxing wine, honey brown sugar, garlic, Chinese 5 spice and red food coloring together. Add the Pork belly and marinate overnight.
  • Preheat the oven to 300 degrees. Line a roasting pan with foil. Place the grate in the bottom of the roasting pan. Add the pork belly and discard the marinade.
  • Roast the pork belly for 2 hours turning every half hour.
  • Mix the ingredients for the glaze together in a small saucepan. Bring to a boil and reduce the heat to low and reduce by half. Serve the glaze over the pork belly

2 lbs pork belly ((skin on))
2 (Steel or wood skewers)
2 tsps salt
1 tsp five spice powder
1 tsp white pepper
3 tbsps white vinegar

Steps:

  • Heat your sous vide bath to 74C / 165F.
  • Using a sharp pairing knife, slide horizontal cuts through the skin about 1-inch apart. Be careful to only cut through the skin and not too deep into the underlying fatty layer.
  • Criss-crossed two skewers (I used metal ones) from corner to corner. This will keep the pork belly flat as it is being cooked sous vide.  This will help make it easier to crisp the skin later under the broiler.
  • In a small bowl, combine the salt, white pepper and Chinese five spice power. Sprinkle halfof the mixture generously to cover the underside of the pork belly (opposite side of the skin).
  • Vacuum seal your pork belly. If the tips of your skewers are exposed on one side of the pork belly, make sure you don't puncture the bag as you vacuum seal or handle it.
  • Cook the pork belly for 6-8 hours. Any longer than this will significantly change the texture.
  • At the end of the sous vide bath, cut open the bag, pour away the accumulated liquid and remove the skewers.
  • Using paper towels, pat the entire belly completely dry, with extra focus on the skin.   Make several passes to make sure it's completely dry.
  • Take the remainder of the salt, white pepper and Chinese five spice powder and sprinkle on the underside of the belly (opposite side of the skin).
  • Flip over the belly, and brush it with a very thin layer of white vinegar. This will help it crisp more quickly and evenly in the oven.
  • Lay the pork belly on a baking sheet with a rack, so it is elevated off the tray. Put it under a broiler set to high and cook it to crisp the skin.  As it's cooking, you will need to move the tray around to avoid hot spots burning too much of the skin.  After about 10-15 mins, the skin will be a nice dark brown and you can remove it from the oven.
  • Laying the pork belly on a cutting board, use a large Chef's knife or meat cleaver, cut into bite sized pieces.  While I left the skin intact, you can optionally scrape off any of the skin that's too blackened to improve the presentation.
  • Serve with white rice and Chinese chili sauce.

  • To Prep Mix the salt, five-spice powder and white pepper together. Rinse and clean the pork belly before drying with paper towels. Using a fork, knife or skewer, poke many holes evenly around the skin of the pork belly to stop any bubbles from forming while it is roasting. Make sure as to not poke holes fully through the skin. Rub the Shaoxing wine on to the bottom of the pork belly before rubbing in the dry mix. Ensure that the skin of the belly is kept clean. Place the pork belly on aluminium foil and fold the sides on to the meat. You should be left with a wrapped pork belly but the skin should still be fully exposed. Place the pork belly in to the fridge to marinate and dry for at least 8 hours. Once the pork belly has marinated, remove it from the oven and brush the skin lightly with white vinegar before covering the skin with coarse salt to form a layer. To Cook Bake the pork belly in an oven at 200 degrees Celsius for 45 mins. After 45 mins, take the pork belly out of the oven and remove the salt layer on top of the skin. Take the pork belly out of the aluminium foil and place it on to a wire rack to roast. Make sure to use either the leftover foil or another tray to catch the oil drippings. Return the pork belly to the oven, putting it on the highest rack to broil. Cook for another 10 mins or until the skin has become crispy. Remove the pork belly from the oven and let rest for at least 10 mins before cutting it in to bite-sized pieces to serve! To make the cutting easier, start from the meat side and cut down in to the skin.
