Chinese Peanut Chicken Recipe - Chinese.Food.com image

My neighbor from Shangai just came over to teach me this recipe. She says she always makes it for potlucks and everybody loves it. I can see why.

Total Time 30 minutes

Prep Time 15 minutes

Cook Time 15 minutes

Yield 4-6 serving(s)

Number Of Ingredients 7

2 cups roasted peanuts (if peanuts are not roasted, see * below.)
5 garlic cloves, minced
1 1/2 inches gingerroot, minced
3 scallions, chopped
4 -5 boneless skinless chicken breast halves, cubed
3/4 cup soybean paste, sweetened (found in Asian markets)
1/3 cup sugar

Steps:

  • Fry garlic and ginger on medium-high heat until beginning to brown. Add green onion and let fry for half a minute.
  • Add chicken cubes and turn up the heat to high, stir-frying until opaque.
  • Turn heat back down to medium. Toss in peanuts and soybean paste, stirring to coat.
  • Sprinkle sugar over the mixture and stir for a minute or two longer.
  • Serve with rice.
  • *If your peanuts are not roasted, put them in an oven preheated at 350 for 15-20 minutes. Stir once before done. Take them out before completely roasted because they continue to cook once out of the oven.

PEANUT BUTTER CHICKEN - BIGOVEN.COM

Peanut Butter Chicken - BigOven.com image

"You know that crispy peanut butter chicken you can often find on Chinese buffet tables? This is it. Or... a very close approximation of how to make it yourself. "

Total Time 30 minutes

Prep Time 30 minutes

Yield 6

Number Of Ingredients 13

1.5 lbs boneless chicken cutlets
3/4 cup milk
3 Tbsp. creamy peanut butter (or maybe a little more)
1 egg
Salt and pepper
Approximately 2-3 cups crushed Corn Flakes
Vegetable/Canola Oil
For Sauce
1/2 cup creamy peanut butter (or maybe a little more)
3 Tbsp. soy sauce
3 Tbsp. brown sugar
3/4 cup water (can reduce or adjust to get the thickness d
Drizzle of honey

Steps:

  • "Whisk together the milk, 3 tbsp of creamy peanut butter, and egg. Sprinkle in a few dashes of salt and pepper. Soak your chicken in this mixture for a few minutes while you get any other prep done (I did this while getting the carrots and broccoli ready to steam and starting the rice).  While chicken is soaking, put all sauce ingredients in a glass measuring cup or other microwavable container. You might want to start with 1/2 cup of water and add more later to reach your desired consistency. Microwave this mixture for 30 seconds and then whisk to thoroughly combine. Microwave another 30 seconds until hot. At this point you can add more water if necessary to make the mixture a little thinner. This can be done ahead of time and just reheated when the rest of the meal is ready. Coat soaked chicken pieces in Corn Flakes and cook in oil, flipping once, until browned on both sides and cooked through. Serve with rice & veggies of your choice and drizzle with peanut butter sauce. ENJOY! "

This wonderful recipe is a family favorite of ours - and we have 3 very young children! Everyone who enjoys this recipe always asks what restaurant we ordered it from! It is fast and simple to make. I would say it's a bit like a stir fry with a Thai flavor! Serve on top of cooked brown or classic white rice. Very good with a simple side like mandarin oranges to complete this meal

WEST AFRICAN PEANUT CHICKEN RECIPE | MYRECIPES
A couple of years ago we attended an "Africa" night at a local university, where a variety of wonderful African foods were served for dinner. The thing I liked best was a delicious peanut chicken dish that sent me scampering for a recipe as soon as I got home.  My family loves this adaptation of the original, served over rice. The original recipe calls for homemade peanut butter. If you'd like to use fresh ground peanut butter, you can grind your own at the grocery store,  whirl some roasted peanuts in your food processor, or buy a jar of natural peanut butter.
