Steps:

  • In a large bowl, whisk together the flour, baking powder, and salt. Using an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes. Beat in the egg and then the vanilla. Reduce the mixer speed to low and gradually add the flour mixture, mixing just until incorporated. Shape the dough into 4 disks and roll each between 2 sheets of wax paper to 1/8 inch thick. Chill until firm, 30 minutes in the refrigerator or 15 minutes in the freezer. Heat oven to 350 degrees F. Line baking sheets with parchment paper. Using floured cookie cutters, cut out cookies. Place on the prepared sheets. Reroll, chill, and cut the scraps. Bake, rotating the positions of the pans halfway through, until the cookies are lightly golden brown around the edges, 10 to 12 minutes. Let cool on the sheets for 5 minutes before transferring to wire racks to cool completely.

Roll out 1 disk between 2 sheets of wax paper to 1/4 in. thick. Remove top layer of wax paper and cut out shapes using cookie cutters. Transfer to a baking sheet and bake for 12 minutes or until cookies are golden. Transfer cookies to wire rack and cool completely. Decorating Icing: In a large bowl, with mixer on low speed, beat 1 lb confectioners' sugar and 3 Tbsp Just Whites.* Add 6 Tbsp water; beat until blended. Increase mixer speed to high and beat 8 minutes or until icing is very thick and white. Makes 2 1/2 cups. Divide decorating icing into 2 bowls. Tint one yellow. Transfer half of each color to separate pastry bags fitted with plain writing tips. Thin the remaining icing with a few teaspoons water to the consistency of slightly whipped cream. Spread thinned icing over cookies; let dry completely. Decorate with icing in pastry bags; sprinkle with decorating sugar. *Just Whites is available in supermarkets nationwide.

  • Cream shortening, sugar, orange peel, and vanilla thoroughly. Add in egg and beat until light and fluffy. Add in the milk and mix. Sift dry ingredients together, then blend into cream mixture. Divide dough in half (thirds if you double your recipe), slightly flatten between two sheets of waxed paper, then refrigerate for one hour (or freeze for 20 minutes). While dough is chilling, combine egg yolk, water and food coloring to make the egg yolk glaze.  Roll out dough on lightly floured surface and cut into shapes with a cookie cutters. Transfer shapes to lightly greased cookie sheet and paint cookies (with a soft brush) with egg yolk glaze. After brushing with egg yolk glaze, bake at 375 degrees for approximately 6 minutes. Do not allow the cookies to brown. While cookies are baking, mix powdered sugar, milk and egg whites (which are optional) to make the decorative icing. Remove cookies from oven to a wire rack to cool. Then, using a pastry bag or Ziploc bag, pipe with white icing to decorate.

  • In a large bowl, combine the flour, salt, allspice, cloves, ginger, nutmeg, and cinnamon. Set aside. In a mixer, beat the margarine (or butter) and brown sugar until fluffy. Drizzle in the molasses, mixing well and scraping the sides of the bowl a couple of times to make sure it's evenly combined. Add the eggs and maple extract and mix. Remove with a spatula and allow to cool completely. ***IMPORTANT NOTE: Bake for less time if you desire a softer cookie and if cookies are small. Keep an eye on them and don't let them get too crisp. To make the royal icing, beat the powdered sugar, milk, and egg whites until thick but still able to be piped. Transfer to a piping bag fitted with a fine tip (or a squirt bottle.)  Decorate the cookies however you'd like, using icing as an accent and as glue to hold on the candies. Allow icing to set before transporting or serving.
