CHINESE NOODLES - HY-VEE RECIPES AND IDEAS
This mildly spiced pasta is quick and easy and can be served hot or cold. If you like it spicier, add a little more hoisin sauce and some crushed red pepper when you dress the noodles.

To make marinade, in small bowl, whisk together hoisin sauce, soy sauce and rice vinegar. Reserve 2 tablespoons marinade. Pour rest over tofu and stir to coat.
- 2.
Put tofu cubes on nonstick baking sheet and bake at 350 degrees for 20 minutes, turning once. While tofu bakes, prepare pasta and vegetables.
- 3.
Break pasta in half and cook according to package directions. When done, drain the pasta and toss with sesame oil.
- 4.
Add reserved marinade and toss again.
- 5.
Saute snow peas, broccoli, carrots and onion in nonstick skillet, with a little water to prevent sticking, until crisp tender.
- 6.
Add vegetables along with baked tofu to the past and gently mix. Sprinkle with sesame seeds, if desired.
- 7.
Serve hot or cold.

Steps:
- Put noodles in 4 cups of salted boiling water. Cook 1-2 minutes. Stir occasionally.
- Drain and dry.
- Heat oil in wok or frypan until smoking hot.
- Add ginger and onion stir for 30 seconds.
- Add noodles and fry for 5 minutes over med heat.
- Add sauce, and stir until coated.
- Serve hot or cold.
- Sometimes I add some julienned carrots or broccoli to this.
