15 -16 ounces chicken breasts
1 teaspoon salt
2 eggs
1 cup cornstarch
1/4 cup canola oil
13 1/2 ounces coconut milk, one can
3/4 cup sugar
1 teaspoon cider vinegar
1 teaspoon pepper

Steps:

  • For the chicken: Heat oil in a skillet over medium heat and preheat oven to 325ºF. While oil is heating, season chicken with salt and pepper.
  • Dip chicken in egg (beaten), then cornstarch, and fry in the oil until lightly golden brown, but not cooked through.
  • Remove chicken from pan and place on paper towel-lined plate briefly, cut the chicken breasts into 1-2 inch pieces, then place in a single layer in a baking dish.
  • For the sauce: In a medium bowl, whisk together the coconut milk, sugar, and vinegar. Pour the sauce over the chicken and bake for about an hour, stirring the chicken every 15 minutes. Once cooked through, let stand for at least 5 minutes to allow the sauce to thicken. Serve immediately over rice or however is desired.

onion, roughly chopped
ground coriander
ground cumin
ground turmeric
oil
x 390g cartons chopped tomatoes
sugar
piece root ginger, peeled and finely chopped
cloves garlic, finely chopped
red chillies, deseeded and finely chopped
400ml tin reduced-fat coconut milk
bone-in and skinless chicken thighs
Juice of ½ lime
chopped coriander

Steps:

  • Whizz the onion in a food processor with the coriander, cumin, turmeric and 100ml water, until a paste is formed.

    Heat the oil in a large sauté pan or shallow casserole dish. Add the onion paste, tomatoes, sugar and 1 tsp salt. Simmer together for 5 minutes, stirring.

    Stir in the ginger, garlic, chopped chilli and coconut milk. Bring to a simmer, then add the chicken thighs. Cover and gently simmer for 15 minutes.

    Remove the lid, increase the heat and simmer for a further 5-10 minutes or until the sauce has thickened. Stir in the lime juice and coriander. Serve with rice.
