- To make the chimichurri, blitz the parsley, oregano, garlic, shallot and chilli flakes in a food processor or chop very finely by hand. Add 2 tbsp of the olive oil, the lemon juice, vinegar and some seasoning, and pulse to combine everything to a saucy consistency.
- Rub the remaining oil and a little seasoning into the steaks. Heat a griddle or frying pan and cook the steaks for 2-3 mins on each side or until done to your liking. Rest for a few mins, then spoon over the sauce and serve with fries and salad.

Preheat the oven to 180. Remove steaks from the fridge and allow to get to room temperature, season each steak and add a little oil and set aside
Blitz together herbs, garlic onion and chilli with the oil and vinegar and season with salt and pepper
Add the tomatoes to a baking tray season and add a little oil, put in the oven to roast for about 5/7 minutes
Once you're ready to cook the steaks, heat a heavy bottomed frying pan and once hot, add the steaks. Cook for 2 minutes each side for medium rare, 2 1/2 minutes for medium and 4-5 minutes for well done. Serve with the Chimichurri sauce over the top with the tomatoes on the side.

- Heat grill to medium. In large bowl, toss peppers with 1 Tbsp oil and 1/4 tsp each salt and pepper. Season steak with 1/4 tsp each salt and pepper. Grill steak and peppers, covered, turning peppers occasionally until peppers are lightly charred and tender, 5 to 7 min. Add steak and cook to desired doneness, 5 to 8 min. per side.
