My Bisquick Irish Soda Bread Recipe - Food.com image

The original recipe came from Cooks.com but I changed it a little to make it more "diet friendly". Sometimes I leave out the "optional" caraway seeds since I don't really care for them that much. I like to use 1/4 cup orange flavored dried cranberries (craisins) and 1/4 cup golden raisins. Be sure to plump whichever you use in the 3/4 cup of water in the microwave just short of boiling before adding.

Cook Time 30 minutes

Yield 1 round loaf, 8 serving(s)

Number Of Ingredients 8

6 tablespoons shortening (All Vegetable Crisco)
2 cups bisquick heart smart biscuit mix
1 tablespoon Splenda granular
1/2 cup golden raisin (orange flavored dried cranberries-craisins)
1 tablespoon caraway seed (optional)
1/4 cup nonfat dry milk powder
3/4 cup water
nonstick baking spray with flour

Steps:

  • Add shortening and powdered milk to biscuit mix and cut in with 2 knives until mix is like coarse meal.
  • Plump raisins or craisins in 3/4 cup water in microwave for a few seconds just short of boiling.
  • Add sugar, and caraways seeds and plumped raisins or craisins along with the water to the flour mixture and stir until well blended.
  • Spread with your hands in the bottom in a flour sprayed 9 inch pie plate.
  • Bake in 375 degree oven for 30 minutes.

Take Irish Soda Bread dough and make it into these buttery, flaky biscuits this St. Patrick's Day!

Provided by Girl Versus Dough

Total Time 30 minutes

Prep Time 15 minutes

Yield 8

Number Of Ingredients 8

2 cups Gold Medal™ all-purpose flour
2 teaspoons granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons cold unsalted butter, diced
1/2 cup raisins
1 tablespoon caraway seeds
3/4 cup buttermilk

Steps:

  • Heat oven to 375°F. Line a baking sheet with a silicone mat or parchment paper.
  • In a large bowl, whisk together flour, sugar, baking soda and salt to combine. Cut in butter with fingers, a fork or a pastry cutter until butter is the size of small peas and mixture is slightly crumbly.
  • Stir in raisins, caraway seeds and buttermilk with a wooden spoon until just combined. Turn out dough onto a counter and knead very lightly until dough is just combined.
  • Pat dough into a 1-inch thick circle. Use a biscuit or cookie cutter to cut dough into 2-inch rounds. Re-pat the scraps together to make more biscuits. Place biscuits a couple of inches apart on prepared baking sheet.
  • Bake 15 minutes until biscuits are baked through and golden brown. Serve warm or room temperature.
