This chili contains no onions, beans or tomatoes. It is even better the next day. Season to your tastes as it may be too spicy for you. You can also add pinto beans, sour cream and lime juice, if desired.

3 pounds boneless beef chuck roast - cut into 1 inch cubes
2 tablespoons olive oil
3 cloves garlic, minced
3 tablespoons chili powder
2 teaspoons ground cumin
3 tablespoons all-purpose flour
1 tablespoon dried oregano
2 (14 ounce) cans beef broth, divided
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Heat the oil in a large skillet over medium high heat. Saute the beef cubes in the oil for 2 minutes. Reduce heat to medium and stir in the garlic.
  • In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 1 1/2 cans of the broth.
  • Add the salt and ground black pepper, stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 90 minutes. Pour in remaining broth and simmer 30 minutes more, until meat begins to fall apart. Cool, cover and refrigerate to allow the flavors to blend.

2 lbs. Ground Beef, (90% lean)
1 Tbsp. vegetable oil
1 large onion, chopped
1 green bell pepper, chopped
1 jalapeño pepper, ribs and seeds removed, chopped
4 garlic cloves, minced
2 Tbsp. chili powder
1 Tbsp. paprika
1 Tbsp. ground cumin
1 tsp. dried oregano
½ tsp. freshly ground black pepper
½ tsp. Kosher salt
1 can (8 oz.) tomato sauce
1 can (10 oz.) diced tomatoes & green chilies, undrained
1 cup beer
½ cup (2 oz.) shredded reduced-fat sharp cheddar cheese
Sour cream
Sliced green onions
Shredded cheddar cheese

Steps:

  • Heat a large Dutch oven over MEDIUM-HIGH heat; add oil. Lower heat to MEDIUM; add onion, bell pepper and jalapeño pepper stirring occasionally until tender, approximately 4-7 minutes. Add garlic and cook for an additional 1 minute.
  • Add Ground Beef. Cook for 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Pour off drippings, as necessary.
  • Add chili powder, paprika, cumin, oregano, black pepper and salt; cook 1 minute.
  • Add tomato sauce, diced tomatoes & green chilies, and beer; bring to a boil.  Reduce heat to low, cover and cook 30 minutes. Add shredded cheese. Serve with your favorite toppings.
