These beat chicken nuggets any day and the recipe is so simple. I tend to use chicken tenderloins but you can use sliced chicken breasts if easier.

1 egg
½ cup dry bread crumbs
2 tablespoons vegetable oil
8 chicken tenderloins

Steps:

  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Whisk egg in a small bowl.
  • Mix bread crumbs and oil together in a second bowl until mixture becomes loose and crumbly.
  • Dip each chicken tenderloin into the bowl of egg; shake off any residual egg. Dip chicken into the crumb mixture, making sure it is evenly and fully covered. Lay chicken tenderloins into the basket of the air fryer. Cook until no longer pink in the center, about 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 cup panko bread crumbs
1/2 cup potato sticks, crushed
1/2 cup crushed cheese crackers
1/4 cup grated Parmesan cheese
2 bacon strips, cooked and crumbled
2 teaspoons minced fresh chives
1/4 cup butter, melted
1 tablespoon sour cream
1 pound chicken tenderloins
Additional sour cream and chives

Steps:

  • Preheat air fryer to 400°. In a shallow bowl, combine the first 6 ingredients. In another shallow bowl, whisk butter and sour cream. Dip chicken in butter mixture, then in crumb mixture, patting to help coating adhere., In batches, arrange chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until coating is golden brown and chicken is no longer pink, 7-8 minutes on each side. Serve with additional sour cream and chives.

  • In a zip-top plastic bag, combine the chicken tenders, buttermilk, 1 teaspoon of seasoned salt and ½ teaspoon of black pepper. Seal and massage the buttermilk mixture into the tenders. Let marinate for 30 minutes, or up to 2 hours, in the refrigerator. Meanwhile, place the flour on a small plate. In a wide shallow bowl, whisk together the two eggs. In another wide, shallow bowl, combine the panko, parmesan cheese, remaining 1/2 teaspoon of seasoned salt and 1/4 teaspoon of black pepper.  Using a pair of tongs, remove the chicken from the buttermilk marinade (reserve the marinade) and place the chicken in a single layer on a paper-towel lined plate. Pour the remaining buttermilk marinade into the bowl with the eggs and whisk to combine. Working 2-3 tenders at a time, dredge all over in the flour, dip in the egg mixture to coat completely, then dredge to coat completely in the panko breadcrumb mixture. Repeat until all of the tenders are breaded. Spray all over both sides of each tender with cooking spray (olive oil spray gives great flavor!) Working in two batches, place the tenders in a single layer, with about ½-inch of space between them. Cook in the air fryer set at 380°F for 8 minutes. Then flip and continue to cook for 4-6 minutes longer, until the internal temperature of the chicken reads 165°F. Repeat with the second batch of tenders. Serve immediately alongside dipping sauces such as honey mustard, BBQ sauce, and/or ranch dressing.
