Bayou Chicken Recipe: How to Make It - Taste of Home image

When I came across this recipe many years ago, I knew I had a new-found family favorite on my hands. The chicken always turns out moist and tender.

Number Of Ingredients 14

1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 broiler/fryer chicken (3 to 4 pounds), cut up
2 tablespoons butter
2 tablespoons canola oil
1/2 pound sliced fresh mushrooms
1/4 cup chopped onion
3 cans (15-1/2 ounces each) black-eyed peas, drained
1/2 teaspoon garlic salt
1/4 teaspoon herbes de Provence
1/2 cup white wine or chicken broth
1 medium tomato, chopped

Steps:

  • In a large resealable plastic bag, combine the flour, salt, pepper and paprika. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown chicken in butter and oil on all sides. Remove and set aside. , In the same skillet, saute mushrooms and onion until onion is crisp-tender, stirring to loosen browned bits from pan. Stir in the peas, garlic salt and herbes de Provence. Transfer to an ungreased 13-in. x 9-in. baking dish. , Arrange chicken over pea mixture. Pour wine over chicken; sprinkle with tomato. Cover and bake at 325° for 1-1/4 to 1-1/2 hours or until chicken juices run clear.

12 ounces penne
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1?½ cups half-and-half
½ cup grated Parmesan
Salt and pepper
1 pound boneless, skinless chicken breasts
1?½ tablespoons Cajun spice blend
¼ teaspoon cayenne pepper, optional
2 teaspoons vegetable oil
2 firm-ripe Roma tomatoes, cored and diced

Steps:

  • Bring a pot of salted water to a boil. Cook penne according to package directions.
  • Melt butter over medium heat. Add flour; stir for 1 minute. Add half-and-half; stir until thickened, 6 minutes. Remove from heat; add Parmesan, salt and pepper. Cover.
  • Place chicken between 2 sheets of plastic wrap; pound with a rolling pin to 1/2-inch thickness. Rub Cajun spice and cayenne, if using, evenly over chicken. Warm oil in a nonstick skillet over medium-high heat. Add chicken and cook, turning once, until no longer pink in center, 6 to 8 minutes. Slice chicken.
  • In a bowl, toss pasta with sauce. Top with chicken and tomatoes and serve.

  • While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan.
