Steps:
- In a medium bowl combine the garlic, prunes, olives, capers, olive oil, vinegar, bay leaves, oregano, salt and pepper. Mix well. Spread mixture in the bottom of a 10x15 inch baking dish. Add the chicken pieces, stir and turn to coat. Cover and refrigerate overnight.
- When ready to prepare, preheat oven to 350 degrees F (175 degrees C). Remove dish from refrigerator. Sprinkle brown sugar on top and pour white wine all around chicken.
- Bake in preheated oven for 1 hour, spooning juices over chicken several times as it is baking. Serve on a platter, pouring juices over the top, and garnish with fresh parsley.

- In a large bowl, mix together oil, vinegar, prunes, olives, capers, bay leaves, garlic, oregano, 2 tablespoons salt, and 2 teaspoons pepper. Add chicken to marinade and cover tightly with plastic wrap. Transfer to the refrigerator and marinate for 2 to 6 hours, tossing mixture every few hours to ensure even marination.
- Preheat oven to 350°. Transfer chicken and marinade to a large roasting pan. Pour wine all over and sprinkle brown sugar over chicken.
- Bake chicken, basting every 20 minutes with pan juices, until chicken reaches an internal temperature of 150°, 50 to 60 minutes total.
- Increase oven to 500° and roast until chicken skin is deeply golden, about 15 minutes.
- Remove chicken, olives, and prunes onto a platter and cover loosely with foil. Transfer pan juices to a medium saucepan. Bring the liquid to a simmer over medium heat and let reduce by half, about 6 minutes. Season to taste with salt and pepper and whisk in cold butter and parsley.
- Serve chicken with a drizzle of pan juice reduction.

Huli Huli sauce is like lightened-up pineapple flavored Teriyaki Sauce. It is not thick or too sweet sauce but has right balance of sweet, sour and heat. The thin consistency and pineapple flavor make this the perfect stir-fry sauce and marinade. I also love to use it for yakisoba noodles stir-fry, and as sauce over rice. For all these useful ways to use sauce, I always make a big batch of Huli Huli marinade. Make once, use many times!! Sauce is good in refrigerator for up-to 2 weeks.
The ingredients for Huli Huli Sauce are easy to find pantry-ingredients. Pineapple juice, soy sauce, ginger, garlic, mustard, sherry vinegar, sesame oil, sugar and sriracha. It is amazing how much depth of flavor these simple ingredients add to marinating chicken. I bet if you try once, you will not prefer to buy the store bought Huli Huli sauce ever again. Make at home, guys! It is easy and also budget-friendly.
To make Hawaiian Huli Huli sauce, I mix together pineapple juice, soy sauce, ginger, garlic, mustard, sherry vinegar, sesame oil, sugar and sriracha. For more bold flavor, it is important to use grated ginger and garlic instead of crushed. I also use low-sodium gluten free Tamari Soy Sauce instead of regular soy sauce. Tamari is my personal preference. You can, by all means, use regular soy sauce. Only note that regular soy sauce may not be gluten free and adjust additional salt in sauce as per taste.
Tip: Huli-Huli Sauce is also a perfect Stir-Fry Sauce. I often use it for Yakisoba Noodles Stir-Fry, or Rice Stir-fry.
Thick Glistening Dipping Sauce: You can also transform extra reserved sauce to a glistening thick dipping sauce. Also works great drizzled over rice, or fries.
- In sauce pan, add reserved huli huli sauce and simmer on low.
- When sauce is warm, take out 2 tbsp in a small bowl, add 1 tsp corn starch. Mix well so there are no lumps. Add back to simmering sauce and mix well.
- Heat until sauce is thick enough to coat back of a spoon. Let cool down before serving.
HOW LONG TO MARINATE HULI HULI CHICKEN?
- Whole Chicken Breast - I recommend to marinate whole chicken breasts or thighs for at-least 4 hours, up-to 8 hours (overnight).
- Skewer Chicken - Bit size chicken kabobs have more surface area to absorb marinade faster. So, I recommend to marinate for at-least 30 minutes to 1 hour.
- Whole Chicken - If you planning to grill a whole rotisserie chicken marinated in huli huli sauce. I recommend marinating a day before for more flavor throughout.
WHAT TO SERVE WITH HULI HULI CHICKEN?
I love to serve Huli Huli Chicken with:
- Seasoned White Rice
- Grilled pineapple
- Coleslaw
- Grilled vegetables such as bell pepper, red onion, zucchini.
Note:You also serve Huli Huli Chicken with Sesame Chili Garlic Noodles and Fried Rice. (replace protein featured in the recipes with skewers of Huli Huli Chicken.)
MAKE-AHEAD HULI HULI CHICKEN:
Huli Huli sauce can be made 2 weeks in advance. A day before grilling, slice and marinate chicken (whole breast). For other cuts of chicken check the marinating time above in how long to marinate huli huli chicken section.
This Huli Huli chicken recipe can also be frozen. When the chicken marinade is done, put the chicken and marinade together in a freezer-safe bag. Mix the two together. Freeze. When ready to grill, let defrost for at least an hour to let the marinade soak in. Grill/cook as normal.
Note: Huli Huli Chicken is great potluck dish. Prepare marinade, dice chicken. Add to a food-safe container with lid. Leave to marinate in a cooler. Grill fresh chicken when guest arrive. You can also grill whole chicken breasts instead of kabobs.

Chicken Parmesan in Air Fryer
Chicken Parmesan needs no introduction. If you like pasta and Italian cooking, this is probably the most ordered recipe in every Italian restaurant. I have had my good share of Chicken Parmesan and Eggplant Parmesan in local Italian restaurants and of course in Cheesecake Factory.
When Chicken Parmesan cooks in Air Fryer, aroma is exactly like sitting in restaurant with hot plate of chicken parm and pasta. You will love how this recipe makes it very simple, easier and also healthier way to cook Chicken Parmesan in air fryer.
To achieve that, I do two things:
- I Air Fry panko breaded Chicken Cutlets in single layer until golden crisp from both sides. Then top with dollop of marinara sauce and few tbsp cheese per chicken breast. This single-serve style parmesan chicken is easy to make, easy to assemble and uses less mozzarella cheese. You are welcome to use more marinara sauce if you prefer.
- Use no flour dredge. This saves one step of cooking. Recipe works without flour dredge which is must when deep frying parmesan chicken. You are welcome to use flour but I find it absolutely optional and still perfect results.
What Do You Need to Chicken Parmesan in Air Fryer?
Here are the ingredients to make air fried chicken parmesan:
- Chicken Breast halves (detailed ahead)
- Panko Bread Crumbs
- Egg for egg wash
- Seasonings - Oregano, Basil, Salt and Pepper
- Parmesan Reggiano
- Mozzarella and Marinara Sauce
- Oil Spray
To make Chicken Parmesan, I start by pounding the chicken breast halves to even, about 1/4 inch, thickness. If you have never done this before? Ask you local butcher to cut chicken breast in halves. At home, place halved chicken breast under two pieces of parchment paper. Pound gently with motion moving away from center to get evenly thick chicken breast pieces.
Note: Don't pound too much as it will mince the chicken. Go slow. Check once or twice and then continue.
Breading - Once chicken is evenly thick, dipped in egg wash. Next, pick one piece at a time, fold in panko-parmesan mix pressing often until crumbs stick to chicken making an even coating.
When ready to cook Chicken Parmesan, preheat air fryer and place breaded Chicken on air fryer rack in single layer. My large air fryer holds 3-4 chicken breast breaded cutlets in single layer. One batch is ready to serve in 12 minutes (+ 3 minutes preheat) at 375 degrees Fahrenheit. Smaller fryer will need two rounds.
To make perfectly cooked delicious Chicken Parmesan in Air Fryer every time, I make sure of few things I learned with experience:
- Don't overcrowd the air fryer. Cook in single layer and flip at half time to make golden crispy breaded air fried chicken parmesan.
- Keep an eye in last 1-2 minutes. As fryer size and model varies. Keep an eye in last 1-2 minutes. Also always preheat fryer before adding the breaded cutlets.
- Use Cooking Oil Spray. I prefer to lite spray coat chicken breast on both sides for crispy golden air fried chicken parm cutlets. Chicken will air fry fine without spay but may not get golden brown. Only use oil spay or drizzle 1/2 tsp oil on top. Don't use brush to apply oil.
Tip: Always use a good quality marinara to serve with Chicken Parmesan. I prefer marinara with little heat such as Rao's Arabiaata Sauce.
What to serve with Chicken Parmesan?
Lightly seasoned (olive oi, garlic, parmesan) angel-hair pasta is our all time favorite side with Parmesan Chicken. You can serve any of the following on the side:
- Pasta - Noodles pasta seasoned with olive oil and parmesan, or pesto (like you get in Cheese Cake Factory), or with extra marinara sauce.
- Rice - Boiled or Steamed. Use Brown Rice for more fiber-rich rice.
- Vegetable Salad - A lite salad complements Parmesan Chicken. I recommend Caesar Salad or Romaine Wedge Salad.
- Steamed Vegetable - Since it's homecooked meal, you can also go easy. Steamed broccoli or little cooked zucchini will work. Adds a serving of veggies into the meal.
Substitutes:
It is a very simple recipe which needs just a few ingredients. Yet here are my favorite substitutes:
- No Breading Chicken Parmesan: Use only egg wash and parmesan to make gluten free chicken parmesan. Air Fryer does very good job of making crispy chicken parmesan without panko or flour. It looks and taste as-if breaded. Trust me, I make it very often.
- Mayo Chicken Parmesan: Replace egg wash with coat of mayo, then coat in parmesan + seasoning (with or without panko). This works well when I'm in hurry and want to spend no more than 20 minutes in kitchen.
