4 boneless skinless chicken breast halves (5 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons canola oil
4 tomato slices
4 slices process Swiss cheese
1/4 cup mango chutney
3 tablespoons mayonnaise
4 kaiser rolls, split and toasted
1 cup fresh baby spinach
8 slices ready-to-serve fully cooked bacon, warmed

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. In a large skillet over medium heat, cook chicken in oil for 4-5 minutes on each side or until chicken juices run clear. Top each chicken breast half with a tomato and cheese slice; cover and cook for 2-3 minutes or until cheese is melted., Combine chutney and mayonnaise; spread over roll bottoms. Layer with spinach, chicken and bacon; replace tops.

2 Chicken breasts (about 130 grams)
400 milliliters Chicken broth
3 tomatoes
8 Lettuce
2 cooked Chicken breasts
12 strips Bacon
12 slices Toast
50 grams butter
8 slices Cheddar cheese

Steps:

  • Rinse chicken breasts. In a pot, bring chicken broth to a boil. Add chicken breasts and bring to a boil. Cover and simmer about 15 minutes.
  • Core tomatoes and blanch about 30 seconds in boiling water. Rinse with cold water, peel, and slice. Rinse lettuce and shake dry. Tear drained chicken breasts into pieces.
  • In a pan, fry bacon until lightly browned on both sides. Drain on paper towels. Spread both sides of toast with butter. For each sandwich, layer tomato slices, bacon, cheese, lettuce, and chicken between 3 slices of toast. In a dry pan, fry sandwiches until golden-brown on both sides.
  • To serve, secure sandwiches with toothpicks and cut in half diagonally.
