Italian Chicken Sausage Soup Recipe: How to Make It image

1 package (12 ounces) fully cooked Italian chicken sausage links, halved lengthwise and sliced
1 medium onion, chopped
1 tablespoon olive oil
3 garlic cloves, minced
2 cans (15 ounces each) cannellini beans, rinsed and drained
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes
2 medium zucchini, quartered and sliced
1 can (14-1/2 ounces) reduced-sodium chicken broth
8 ounces whole fresh mushrooms, quartered
1 cup water
1/4 cup prepared pesto
1/4 cup dry red wine or additional reduced-sodium chicken broth
1 tablespoon balsamic vinegar
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/2 teaspoon pepper
Grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage and onion in oil until sausage is browned. Add garlic; cook 1 minute longer., Stir in the beans, tomatoes, zucchini, broth, mushrooms, water, pesto, wine, vinegar, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 25-30 minutes or until vegetables are tender. Sprinkle with cheese.

2 bone-in chicken breast halves (about 2 lb total)
3 medium carrots
2 stalk celery
1 medium onion
containers low-sodium chicken broth
Kosher salt and pepper
1 tbsp. olive oil
6 oz. fully cooked Italian chicken sausage
1 small Head Escarole
can white beans

Steps:

  • Place the chicken, carrots, celery and onion in a large pot. Add the broth, cover and bring to a boil.
  • Reduce heat, add ¾ tsp salt and ½ tsp pepper and simmer, covered, until the chicken is cooked through and the vegetables are tender, 15 to 20 minutes. (Skim and discard any foam that rises to the top.)
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the sausage and cook until browned, 1 to 2 minutes per side. Transfer to a plate.
  • Transfer the chicken to a bowl. When cool enough to handle, shred the meat, discarding the skin and bones.
  • Stir the chicken back into the soup along with the sausage, escarole and beans. Simmer until the escarole is tender, 4 to 5 minutes.
