Cherry Mojitos - Hy-Vee Recipes and Ideas image

Cherry rum adds a sweet, robust flavor as it's poured over muddled mint, fresh cherries, and lime juice.

15 pitted cherries
0.25 c. of fresh mint leaves
2 tbsp. of fresh lime juice
1 (12 oz) can Hy-Vee frozen lemonade concentrate, thawed
1.5 c. of cherry rum (12 oz)
4.5 c. of chilled Hy-Vee club soda (36 oz)
0 Ice cubes
0 Fresh mint sprigs, optional

Steps:

  • 1. Place cherries, 1/4 cup mint leaves and lime juice in a cocktail shaker or muddling glass. Use a muddler to gently “bruise” the mint and release the cherry juice.
  • 2. Pour muddled contents into a pitcher; add lemonade concentrate and cherry rum and stir to combine.
  • 3. Just before serving, slowly add club soda and stir together. Serve in ice-filled glasses. If desired, garnish with mint sprigs.
  • 4. Note: Many summer cocktails use fresh ingredients such as herbs and fruit, and often muddling is required. Muddling helps to release the flavors of the fresh ingredients so they bind better with the alcohol.

1 pound bag frozen pitted cherries
2 cups crushed ice, plus extra to serve
1/2 cup packed fresh mint leaves
1/3 cup fresh lime juice (about 3 limes)
1 cup citrus flavored rum
1 2/3 cups Lime Simple Syrup, recipe follows
Lime wedges and fresh cherries, for garnish
2 cups sugar
1 cup water
3 limes, zested

Steps:

  • Place the frozen cherries, crushed ice, mint leaves, lime juice, rum, and simple syrup in a blender. Blend until smooth.
  • Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.
  • Lime Simple Syrup
  • In a small saucepan, combine the sugar, water, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
  • Yield: 1 2/3 cups
