Cheesy Artichoke Dip Recipe: How to Make It image

"I first tasted this warm, well-flavored dip at our daughter's house—and immediately asked for the recipe," relates Ramona Larson, a homemaker from Andover, Minnesota. Since then, she's served it herself at family gatherings. "Everyone who tries it comes back for more," she reports. If you'd like, you can place the dip in a hollowed-out-artichoke, just like our kitchen crafters did. Or keep it in the dish you bake it in—either way, it'll heat up any setting.

1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 cup mayonnaise
1 cup shredded part-skim mozzarella cheese
1 cup grated Parmesan cheese, divided
1 tablespoon chopped onion
1 tablespoon minced fresh parsley
1/4 teaspoon garlic salt
2 to 3 fresh artichokes, optional
Assorted crackers

Steps:

  • In a bowl, combine the artichoke hearts, mayonnaise, mozzarella cheese, 1/2 cup of Parmesan cheese, onion, parsley and garlic salt. Spoon into an ungreased 1-qt. baking dish. Top with remaining Parmesan cheese. , Bake, uncovered, at 350° for 20 minutes. If desired, use fresh artichokes as serving "bowls". Remove the center leaves, leaving a hollow shell; spoon dip into shell. Serve warm with crackers.

1 bag Mission® Strips Tortilla Chips
1 tsp olive oil
6 cups spinach
2 cloves garlic, minced
2 cups grated Asiago cheese, divide
1 can (14 oz) artichoke hearts, drained and coarsely chopped
1 cup mayonnaise
1 cup cream cheese, softened
1 cup sour cream
2 tbsp chopped fresh chives, divided
1 tbsp lemon juice
half tsp salt
quarter tsp pepper
quarter cup grated Parmesan cheese

Steps:

  • Preheat oven 400°F. Heat oil in large skillet set over medium-high heat; cook spinach and garlic for 2 to 3 minutes or until wilted. Let cool; chop coarsely.
  • In large bowl, combine spinach and garlic, 2 cups Asiago cheese, artichokes, mayonnaise, cream cheese, sour cream, 1 tbsp chives, lemon juice, salt and pepper.
  • Transfer to greased 9- to 10-inch round ovenproof serving dish. Sprinkle with remaining Parmesan and Asiago cheese; bake for 20 to 25 minutes or until top is bubbly and golden.
  • Sprinkle baked artichoke dip with remaining chives. Serve with Mission® Strips Tortilla Chips.
  • For added kick, season your cheesy artichoke dip to preference with your favorite hot sauce or red chili flakes.
