1/2 cup sour cream or 1/2 cup plain yogurt
1/2 cup mayonnaise
2 teaspoons Mexican seasoning (many recipes on food.com)
1 small jalapeno pepper, seeded and diced
1 garlic clove, finely minced (optional)
1/4 cup fresh lime juice
1/2 cup chopped fresh cilantro

Steps:

  • Combine all ingredients; stir well. Best to let it meld flavors for an hour or so before using.

  • Using a food processor, puree peppers and onion. Mix 1 c. mayonnaise and 4 tsp. of the vegetable puree in a medium bowl. Add in remaining ingredients and mix well. Refrigeratefor several hrs to let flavors develop. This recipe yields 1 c..   • Melt the butter in a heavy medium skillet over medium heat. Season the shrimp with salt and pepper, to taste. Cook for about 4 minutes until almost fully cooked. Using a slotted spoon, transfer the shrimp to a plate and tent it with foil. Add the onion and garlic and cook until the onion is translucent, about 6 minutes.
