4 cups thinly sliced peeled Red Delicious apple (about 2 apples)
? cup apple juice
¼ cup packed brown sugar
3 tablespoons raisins
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice, divided
1?½ teaspoons vanilla extract
¼ teaspoon rum flavoring
3 ounces mascarpone cheese
¾ cup low-fat cinnamon crisp graham cracker crumbs (about 8 crackers), divided
1 cup vanilla fat-free frozen yogurt
Mascarpone cheese (optional)

Steps:

  • Combine first 6 ingredients and 1/4 teaspoon allspice in a medium saucepan. Cook 20 minutes over medium-low heat until apples are tender and mixture is slightly thick. Remove apple mixture from heat; let cool. Stir in 1/4 teaspoon allspice, vanilla, rum flavoring, and mascarpone.
  • Spoon 1/4 cup apple mixture into each of 4 parfait glasses; sprinkle each with 1 1/2 tablespoons crumbs. Top each with 1/4 cup yogurt, 1/4 cup apple mixture, and 1 1/2 tablespoons crumbs. Garnish with additional mascarpone cheese, if desired. Serve immediately.

This apple pie has Cheddar cheese baked right inside! Cheddar lines the bottom of the crust and perfectly harmonizes with the apples. Just like you'd find flatbread with goat cheese and honey, the cheese baked right in with the apples provides a buttery and melty texture.

1 (9 inch) frozen pie crust, thawed
6 slices Cheddar cheese
5 medium apples - peeled, cored, and thinly sliced
½ cup butter
3 tablespoons all-purpose flour
½ cup white sugar
½ cup brown sugar
¼ cup water
1 (9 inch) prepared pie crust, at room temperature
1 egg white
1 teaspoon water

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Line the bottom of the pie crust with Cheddar cheese slices. Place apples into the crust in a circular fashion, layering slices on top of one another. Set aside.
  • Melt butter in a medium saucepan over medium heat. Add flour and mix well to combine, removing any lumps. Add white sugar, brown sugar, and 1/4 cup water. Bring to a slight simmer and cook, stirring occasionally, for 5 minutes. Remove from heat and let cool, 5 to 10 minutes.
  • Pour butter mixture over apples to cover all slices. Top with additional pie crust; seal edges. Pierce the top with a fork to allow steam to release. Mix egg white and 1 teaspoon water together in a small bowl; baste over pie crust using a basting brush.
  • Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Continue to bake until golden and set, about 35 minutes more.

  • Preheat oven to 375degrees. In a mixing bowl, stir together the flour and salt. Cut in the shortening to the size of small peas. Stir in the cheese. Sprinkle 1 Tbsp. water over part of the mix; toss with a fork. Repeat till all is moistened. Form the dough into a ball. On a lightly floured surface, roll out the dough to create a 12-inch circle. Ease the crust into a 9-inch pie plate. Trim to 1/2 inch beyond the edge of the plate; fold under the pastry. Finish the edge; don't prick the pastry. In a bowl, combine the apples, sugar, flour, cinnamon and salt. Transfer to the crust. For the topping, stir together the sugar, flour and salt. Cut in the butter till the mix is crumble. Gently stir in the cheddar cheese. Sprinkle over the filling. Cover the edge with foil. Bake for 25 min. Remove the foil and bake for 20 to 25 min longer, or possibly till the top is golden brown and the fruit is tender. Penny Halsey
