Our version of the retro hors d'oeuvre rumaki — bacon-wrapped water chestnuts and chicken liver — substitutes figs, goat cheese and pesto for a fruity, tangy twist. Consider it rumaki 2.0.

24 dried figs (about 10 ounces)
3 ounces fresh goat cheese, at room temperature
1 tablespoon prepared pesto
1 tablespoon fresh lemon juice, plus 1 teaspoon lemon zest
Kosher salt and freshly ground black pepper
12 slices bacon, halved crosswise

Steps:

  • Position an oven rack in the center of the oven, and preheat the broiler. Slice the figs about 3/4 of the way down the center lengthwise, and open each like a book; set aside.
  • Combine the goat cheese, pesto, lemon juice and zest and 1/4 teaspoon each salt and pepper in a small bowl with a rubber spatula. Fill each fig with about 1 teaspoon of the cheese-pesto mixture.
  • Wrap each stuffed fig with a slice of bacon, and secure with a toothpick. Put the figs, seam-side down, on a rimmed baking sheet.
  • Broil, turning once, until the bacon is cooked through and crispy, about 4 to 5 minutes per side.

When we first saw this appetizer recipe we thought it looked interesting. What's not to love - bacon, cream cheese, and bread? We were not disappointed. These little gems are like eating a cream cheese crouton wrapped in bacon. We loved the smoky flavor and crunch of the bread. You will not be able to eat just one. These little appetizers will be a big hit at your next party.

Number Of Ingredients 5

12 slice(s) hickory bacon, thick cut
8 slice(s) sandwich bread
8 ounce(s) cream cheese garlic & herb flavor
1/2 teaspoon(s) smoked paprika
3 tablespoon(s) Old Bay seasoning

Steps:

  • Add 1/2 tsp smoky paprika to the 8 oz tub of garlic & herb-flavored cream cheese. Mix until combined. On 4 slices of bread, generously spread the cream cheese mixture and top with another slice of bread.
  • Cut off the bread crust. Cut each sandwich in 3 rows, turn and cut in half making 6 bites.
  • Cut 12 slices of bacon in half. Wrap each bite with a slice of bacon, secure with a toothpick. Cover a cookie sheet with foil and spray with non-stick cooking spray. Add wrapped bacon bites to prepared pan. Sprinkle Old Bay Seasoning over each one.
  • Place in the center rack of a 400* F oven and cook for 25-30 minutes, until bacon is brown and cooked.
  • For a crisper bacon, place under the broiler for approximately 1 minute (watch them or they will burn). Getcha one before they disappear! Enjoy.
