Make Fajita Grilled Cheese sandwiches for a switch up on the traditional. We love the addition of smoky peppers!

1 teaspoon olive oil
8 slices sourdough bread, thick
4 teaspoons butter
4 slices pepper jack cheese
1 small onion, sliced
1/2 red bell pepper, or green, thinly sliced
1 portabella mushroom, sliced
1/2 teaspoon cumin
1/4 teaspoon salt
1/2 teaspoon oregano
3/4 teaspoon ancho chili powder
1 avocado, sliced

Steps:

  • Preheat a large skillet and drizzle with olive oil.  Add onions, pepper and mushrooms. Sprinkle vegetables with salt, cumin, oregano and chili powder. Cook until vegetables have softened, about 5-7 minutes, remove vegetables and set aside. Wipe out skillet. Butter one side of each bread slice with a 1/2 teaspoon of butter. Place 4 slices buttered side down onto skillet. Top bread with one slice of cheese, 1/4 of the veggie mixture, avocado slices and then remaining bread-buttered side up. Cook until bread begins to brown - about 3-4 minutes, flip and cook the second side until it has browned, also another 3-4 minutes. Serve immediately.

medium yellow onion, halved and sliced into 1/4" strips

extra-virgin olive oil

(1.25-oz.) package McCormick One Sheet Pan Farmer's Market Chicken & Vegetables Seasoning Mix

1 lb.

boneless rib-eye steak, very thinly sliced against the grain

deli slices provolone cheese

flour tortillas, warmed 

Steps:

  • Preheat broiler on high with a rack in the top third of the oven. On a rimmed baking sheet, toss peppers and onions with 2 tablespoons of oil and half of the seasoning mix. Arrange in a single layer. Broil until beginning to turn golden in spots and crisp-tender, about 10 minutes. In a large bowl, toss the steak with the remaining tablespoon of oil and seasoning mix. Add steak to the baking sheet in an even layer on top of the peppers and onions and broil until steak is cooked through, about 5 minutes.  Top steak, pepper, and onion mixture evenly with provolone cheese. Broil until cheese is melted and bubbly, about 1 minute more.  Using a spatula, transfer cheesesteak mixture to flour tortillas.
