I saw Alton Brown make this on Good Eats and had to share! Don't grind the celery seeds too fine. Enjoy this different and delicious soda!

Cook Time 5 minutes
Yield 2 1/4 cups syrup
Number Of Ingredients 4
Steps:
- Put the sugar and the water into a medium saucepan on medium-high heat. Stir to mix well. Continue to stir frequently until all of the sugar has dissolved.
- Remove from the heat and add the celery seed. Cover and allow to steep for 1 hour.
- Strain though a fine mesh strainer into a heat-proof container and place in the refrigerator, uncovered, until completely cool.
- Place in an airtight container and store for up to 6 months.
- To use, add 2 tablespoons of syrup to 1 cup soda water and stir to combine. Enjoy!

This Celery Soda (one of our three healthy sodas) delivers bold flavors and fizzy refreshment with a fraction of the sugar in store-bought soda and mixers. And you won't even need special equipment. Just mix the syrup with seltzer water.

Steps:
- Combine sugar; water; celery seed; chopped celery; and the rind, peeled in strips, of lemon in a saucepan over medium-high heat. Bring to a boil, stirring until sugar dissolves. Remove from heat; steep 1 hour. Strain syrup; discard solids. Cool completely. Stir 4 tsp. syrup into 1 cup (or more, depending on desired flavor) seltzer water. Store syrup chilled up to 2 weeks.
