Steps:
- Place carrots and 3/4 teaspoon salt in 3-quart saucepan; add enough water to cover carrots by 2 inches. Cook over medium-high heat 7-9 minutes or until water comes to a boil.
- Reduce heat to medium; cook 20-25 minutes or until carrots are tender. Drain carrots; return to pan.
- Add remaining salt and all remaining ingredients; mash with potato masher until smooth.
