Carrots, mashed with Land O Lakes® Light Butter with Canola Oil and cinnamon and sweetened with honey, make a comforting, yet low-fat side dish.

1 pound carrots, peeled, cut into 1-inch pieces
1 teaspoon salt
2 tablespoons Land O Lakes® Light Butter with Canola Oil
1 teaspoon honey
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper

Steps:

  • Place carrots and 3/4 teaspoon salt in 3-quart saucepan; add enough water to cover carrots by 2 inches. Cook over medium-high heat 7-9 minutes or until water comes to a boil.
  • Reduce heat to medium; cook 20-25 minutes or until carrots are tender. Drain carrots; return to pan.
  • Add remaining salt and all remaining ingredients; mash with potato masher until smooth.

2 pounds carrots, sliced
1/2 cup butter, cubed
2 tablespoons sugar
1 tablespoon orange liqueur
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg

Steps:

  • Place carrots in a Dutch oven; add water to cover. Bring to a boil. Cook, covered, 15-20 minutes or until very tender. Drain carrots; return to pan., Mash carrots with remaining ingredients by hand or puree in a food processor until blended.
