Yield 1 pie

Number Of Ingredients 11

1 recipe pastry for a 9 inch double crust deep dish pie
½ cup packed brown sugar
¼ cup butter, melted
? cup all-purpose flour
5 cups thinly sliced apples
? cup white sugar
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon lemon juice
20 caramels, halved
2 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • To Make Taffy: In a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. Mix well and set aside.
  • To Make Apple Filling: Place apples in a large bowl. Add white sugar, 3 tablespoons flour, cinnamon, and lemon juice. Toss until all ingredients are mixed well and apples are thoroughly coated.
  • Spoon half of apple filling into pastry-lined deep-dish pan. Top with half of caramels and half of taffy mixture. Repeat process with remaining apple filling, caramels and taffy mixture. Place top pastry over filling and seal well (this is very important--if edges are not sealed, caramel will leak out all over). Cut steam vents and brush top crust with milk or light cream.
  • Cover pie with foil and place on a baking sheet. Bake in preheated oven for 25 minutes. Remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.

SKILLET CARAMEL APPLE PIE RECIPE | SOUTHERN LIVING
If you've never made a double crust pie in a cast iron skillet, this is a great recipe for first-timers (or experienced pie bakers). Swap out your usual pie plate for your trusty cast iron skillet and prepare to be impressed with the results. Not only does a skillet make a dramatic presentation, it can also make a better pie. Often, the bottom crust of a fruit pie can be soggy and under-baked, but a cast iron skillet ensures a super crisp and golden bottom crust. The rich, bourbon-y caramel sauce makes the tender, lightly spiced apple filling and flaky crust even more irresistible. Although this recipe can be made with most apples, Fuji apples are our test kitchen's preference here. The tart-sweet flavor works well with the sweet caramel, and the apples hold their shape when baked instead of turning to mush. Our recipe calls for two store-bought refrigerated piecrusts, but you can use your favorite homemade pie dough recipe if you prefer. Either way, make sure to refrigerate the skillet after you put in the bottom crust for the crispiest results. When it's time to bake the pie, place the skillet in a preheated oven on the bottom oven rack until the crust is golden, the apples are tender, and the filling is bubbly, about 55 minutes to one hour. Cover the pie loosely with aluminum foil after about 40 minutes to prevent excessive browning, if necessary. Although it can be tempting to slice into the pie as soon as it comes out of the oven, let the pie cool completely before serving to allow the filling to set. Top each serving with a scoop of vanilla ice cream and extra caramel sauce to impress your crowd for no extra effort.

  • Make crust: Place flour and butter into freezer for 30 minutes before starting crust process. In a large bowl, combine flour, sugar, and salt. Add butter and using  your hands or a pastry cutter, cut butter into flour mixture until pea-sized and some slightly larger pieces form. Add vinegar and ice water 1 tablespoon at a time, until dough starts to come together and is moist but not wet and sticky (test by squeezing some with your fingers). Mixture will be crumbly. Turn dough onto a lightly floured surface, form into 2 equal size balls, and flatten into disks (making sure there are no/minimal cracks). Cover with plastic wrap and refrigerate until dough is very cold, at least 2 hours or up to overnight. Preheat oven to 400° with a large baking sheet on the middle rack.  In a large skillet over medium heat, add apples, brown sugar, lemon juice, cornstarch, cinnamon, and salt. Cook until liquid has thickened and apples are tender, 12 to 15 minutes. Let cool while rolling out dough.  On a lightly floured surface, roll out one disc of dough into a 12” circle. Transfer crust to 9” pie plate and gently press to fit. Trim edge to a 1” overhang, then tuck under itself and crimp edges. Layer apples on top of crust, then pour caramel over apples.  Roll out second disc of dough into a 12” circle. Cut into 10 strips. Lay 4 strips over apples. Fold back the first and third strip and place a fifth slice over apples in the opposite direction and lay folded-back slices over the fifth slice. Fold back the second and fourth strip and repeat lattice top with remaining crust. Trim strips and press into crimped crust. Freeze for 15 minutes or until crust is well chilled.  Brush chilled crust with egg wash and sprinkle with coarse sugar. Place pie plate onto preheated baking sheet and bake until crust is very golden and filling is bubbling, about 50 minutes. If crust starts to darken too quickly, cover loosely with foil. Let cool on a wire rack at least 2 hours before serving.  Serve topped with more caramel and ice cream, if desired.
