There are different ways to prepare and season shrimp prior to frying. This recipe gives shrimp a distinct and unique flavor.

1 cup milk
2 tbsp mustard (not heaping)
2 tsp onion powder
Cayenne pepper to taste
2 lbs shrimp, cleaned and devined
3/4 cup white corn meal
3/4 cup white corn flour (masa)
Oil for frying

Steps:

  • In a glass bowl combine together the milk and the mustard. Season the shrimp with the onion powder and cayenne.
  • In another bowl, combine the corn meal and corn flour.
  • Dunk the seasoned shrimp in the milk mixture. Then dredge the shrimp with the corn meal and flour mixture and place in frying pan. (The oil is usually hot enough when a small pinch of flour dances on the surface of the oil). Fry until the shrimp float.
  • Remove and drain on paper towels. To keep warm, preheat oven to 200 degrees. Place shrimp in oven until ready to eat.Or for a heart healthy way to prepare - Place shrimp on a cookie sheet that has been covered with foil and sprayed with Pam or other cooking spray. Bake at 350 degrees for 12 to 15 minutes.

2 lbs shrimp (cleaned and deveined)
1 tsp Tony Chachere's Cajun Seasonings
1 tbsp sugar
1 egg
1 cup flour
1 cup of crushed ice and water

Steps:

  • Prepare the batter several hours before frying. Put the flour, sugar, seasonings, and egg in a 2 quart bowl.
  • Fill a 1 cup container with crushed ice and fill with water. Pour over flour mixture and mix well. When this is mixed, add the shrimp. The mixture should look like pancake batter. Some ice chips may remain, but that's okay. Put the mixture in the refrigerator. When you're ready to fry the shrimp, using a fork or tongs, pick the shrimp up one by one and place in hot oil pre-heated in a large pot. When the shrimp become brown and start to float, they're done. Remember the longer the shrimp stay in icebox the better they turn out. (Preparation time does not include peeling the shrimp).
