1 tablespoon olive oil
1 white onion (medium sliced)
5 mushrooms (medium sliced)
5 garlic cloves (chopped)
1/2 head cabbage (sliced and cut into 1 " chunks)
1/4 cup chicken broth
2 boneless skinless chicken breasts (6 oz cut into 1-inch pieces)
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oil in large pot over medium high heat.
  • Add garlic and chicken, saute until chicken is no longer pink.
  • Add onions and mushrooms, saute until onions are translucent.
  • Add cabbage, saute until cabbage is soft, about 5 minutes.
  • Add chicken broth and reduce heat to medium. Cover and cook about 7 minutes or until cabbage is tender.
  • Increase heat to medium high and saute 2 minutes or until liquid evaporates.

3 chicken breast halves, cut into strips
1 teaspoon vegetable oil
3 cups shredded green cabbage (1/2 head)
1 Tablespoon cornstarch
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder or 1 clove garlic, finely chopped
1/2 cup water
1 Tablespoon low-sodium soy sauce

Steps:

  • Wash hands with soap and water.
  • Heat oil in a skillet over medium-high heat (350 °F in an electric skillet).
  • Add chicken strips and stir-fry, turning constantly until done.
  • Add cabbage and stir until cabbage is crisp-tender, about 2 minutes.
  • In a small bowl, mix cornstarch and seasonings. Add water and soy sauce; mix until smooth.
  • Stir sauce into chicken and cabbage mixture.
  • Cook until sauce has thickened and chicken is coated, about 1 minute.
  • Refrigerate leftovers within 2 hours.
