Easy Raspberry Cheesecake Recipe | Sainsbury's Recipes image

The perfect no-bake creamy cheesecake recipe, with hints of raspberry and lemon. This is the ideal summer dessert and the simple recipe means it's easy to make.

unsalted butter
digestive biscuits, crushed
full-fat cream cheese
Greek yogurt
double cream
2 lemons, zested and juiced
caster sugar
raspberries
icing sugar, to dust

Steps:

  • Line the base of a 20cm loose-bottomed round cake tin with greaseproof paper. Melt the butter in a saucepan and stir in the crushed biscuits. Stir until well coated in the butter. Tip the biscuit mixture into the base of the prepared tin and spread out. Pack the biscuit crumb into the base with a spoon and chill for 5 minutes.

    Meanwhile, mix together the cream cheese, Greek yogurt, double cream, zest and juice of 1½ lemons and the caster sugar in a bowl. Fold in half the raspberries.

    Remove the biscuit base from the fridge and spread the mixture over the top in an even layer. Return to the fridge and chill for at least 4 hours.

    When ready to serve, remove the cheesecake from the fridge. Dip a knife in hot water and dry it before running around the inside of the tin. Unclip the tin and lift the cheesecake out. Remove the greaseproof paper and serve decorated with the remaining raspberries and dusted with icing sugar.

This is an easy recipe for jam-filled yeast-risen donuts. The recipe is made with simple pantry ingredients and the donuts are cut, fried, and filled.

Number Of Ingredients 10

1 cup red raspberry seedless jam ( or whatever flavored jam you prefer)
1 cup whole milk scalded to lukewarm
1 package of active dry yeast
1/3 cup granulated sugar
6 tablespoons melted butter (cooled to lukewarm)
2 large eggs at room temperature
4 - 1/2 cups all-purpose flour more for rolling
1/2 teaspoon salt
oil, for frying
Optional Garnish: granulated sugar or powdered sugar

Steps:

  • In a small saucepan heat the milk to lukewarm.
  • Place the milk in a bowl.
  • Stir in the yeast and let it sit for around 10 minutes.
  • Using an industrial mixer, place this mixture in the bowl adding sugar, salt, melted butter, and eggs.
  • Add the flour a little bit at a time on slow speed until it's all incorporated evenly.
  • Knead the dough for around 3 to 5 minutes.
  • Cover with plastic wrap to rise for around 1 hour in a warm area.
  • On a floured board, roll out the dough to 1/2 inch thickness.
  • Using a 3 or 4-inch biscuit cutter, cut the dough into rounds.
  • Put them on a floured cookie sheet and cover them with plastic to rise for 30 minutes.
  • Heat the oil in a deep dutch oven pan on medium heat at 350 degrees and fry the donuts on each side until golden, it takes around 2 minutes on each side.
  • Remove from oil with a slotted spoon and drain them on paper towels.
  • Cool completely before filling.
  • Using a chopstick or small wooden dowel, poke a hole in each donut
  • Fill the donuts with jam after they are completely cooled using a pastry tip and bag filled with the preferred jam flavor.
