2.5kg pork leg
125ml soy sauce
50ml vinegar
50ml sugar
1 large onion, chopped
5 garlic, chopped
ground black pepper
100g crab fat or crab paste

Steps:

  • In a large pot or slow cooker, add vinegar and sugar. Slowly heat the sugar & vinegar syrup while stirring on medium heat. Once the sugar dissolves add soy sauce, onions, garlic and black pepper into the pot and bring it to a boil. Gently add the pork leg into the pot, be careful that the hot sauce doesn’t splash on you. Using a spoon or wooden spoon, pour some sauce on top of the pork. Turn the heat down to low, simmer the pork for 2 hours or until soft, turning it every so often to cook evenly and pouring some sauce on top of the pork too while simmering. Once the pork is cooked, gently place it on a serving bowl, garnish and serve with rice.
