The title says it all. A wonderful combination of black-eyed peas, turkey, and seasonings. It takes less than 1 hour to make these tasty beans in your pressure cooker.

Number Of Ingredients 6

2 pounds dried black-eyed peas, sorted and rinsed
1 large smoked turkey leg
1 onion, chopped
2 cloves garlic, chopped, or to taste
olive oil
1 teaspoon ground black pepper, or to taste

Steps:

  • Place peas and turkey leg into a pressure cooker. Stir in onion, garlic, olive oil, pepper, and water to cover. Bring to a simmer. Close and lock lid.
  • Adjust temperature until regulator is gently rocking. Cook at high pressure for 15 to 20 minutes. Let pressure release naturally according to manufacturer's instructions for at least 5 minutes; open lid and add more water if needed. Replace lid and cook until beans are tender, 5 to 15 minutes more. Let pressure cooker cool for about 5 minutes before opening. Remove turkey bone.

Number Of Ingredients 9

1 smoked turkey leg
3 links hot beef link sausage, diced
¼ cup finely chopped onion
1 tablespoon garlic salt
1 teaspoon ground black pepper
1 teaspoon seasoned salt
6 cups water, or as needed
3 (16 ounce) packages frozen black-eyed peas
1 teaspoon white sugar

Steps:

  • Place the smoked turkey leg, sausage, onion, garlic salt, black pepper, and seasoned salt into a large soup pot; pour in water to cover. Bring to a boil over medium heat. Reduce heat and simmer until the meat is tender, about 1 hour.
  • Stir the black-eyed peas into the soup, adding more water as needed to cover peas by 1 inch. Bring to a boil. Again reduce heat and simmer until the peas are tender and have begun to break apart, about 1 more hour.
  • Remove turkey bones and tendons from the turkey meat and discard the bones. Add sugar and simmer until the soup is slightly creamy and thickened, stirring frequently, about 10 minutes

  • Place black-eyed peas in large bowl and cover them with cool water. Soak overnight. Drain peas, rinse thoroughly and set aside to drain again. Heat oil in large saucepan over medium-high heat, and saute/fry onions and garlic till soft. Add in peas, bell pepper, chicken stock, bay leaf, salt and red pepper flakes. Cover and bring to boil. Reduce heat and simmer 1 hour, or possibly till beans are tender. Stir in smoked turkey and simmer for another 15 min. Remove and throw away bay leaf. Top each serving with tsp. of lowfat sour cream and sprig of cilantro, if you like. This recipe yields 6 servings.
