This is a simple, lovely way to serve fresh summer berries. I made this for brunch today and found it a refreshing end to the meal. This dish could also be made year-round using unsweetened frozen berries that have been thawed. Note: Preparation time includes time needed for berries to sit at room temperature.

1/2 cup blackberry
1/2 cup raspberries
1/2 cup strawberry, hulled and quartered
1/2 cup blueberries
1 teaspoon lemon zest
2 tablespoons granulated sugar
1/4 cup light cream (or half-and-half or milk)

Steps:

  • In a medium bowl, combine berries, lemon zest and sugar. Gently toss, being careful not to break the blackberries and raspberries too much.
  • Allow berry mixture to sit at room temperature for 30 minutes until berries begin to create their own juice, and sugar is dissolved.
  • Serve in four small serving bowls (or dessert bowls) with around 2 tbs. cream drizzled attop per bowl.

1?½ cups sliced fresh strawberries
1?½ cups fresh blueberries
1 cup part-skim ricotta cheese
1 tablespoon nonfat evaporated milk
1 tablespoon white sugar
1?½ tablespoons Marsala wine
1?½ tablespoons chopped toasted hazelnuts

Steps:

  • Layer the strawberries and blueberries in 6 individual serving dishes.
  • Using an electric beater, whip together the ricotta cheese, milk, sugar and wine. Spoon a portion of the cream over each fruit serving, top with toasted hazelnuts, and serve.

  • 1. In a medium bowl, whisk together the flour, salt and baking soda to combine. 2. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter with the sugar on medium speed until pale and fluffy, about 3 minutes. Add the egg and egg yolk, and mix to combine. Add the vanilla and mix to combine. Add the flour mixture and mix until just combined; reserve the medium bowl. (Try to not overmix the dough or the cookies will be tough.) 3. In in a food processor or high-speed blender, pulse the freeze-dried berries into a fine powder. 4. Divide the dough in half, and transfer one half to the reserved mixing bowl; set aside. To the stand mixer bowl, add the berry powder and mix on medium speed until just combined. 5. Preheat the oven to 350?F and line three baking sheets with parchment paper. 6. To form the cookies, pinch off a small piece (22g or a rough tablespoon) of each dough and lightly press them together, then roll the dough into a ball. Arrange the dough balls between the baking sheets (about 8 per sheet). 7. Bake the cookies one baking sheet at a time, until they are puffed and set but not golden on the edges, 9 to 10 minutes. Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. The cookies will keep in an airtight container at room temperature for 3 days.

  • Combine cream with half the sugar in a medium saucepan. Bring to a strong simmer, but don't boil. Whisk egg yolks in a bowl (I used my electric mixer with whisk attachment) with the other half of the sugar. Add vanilla extract. (If using a vanilla bean instead, split the pot lengthwise then scrape the caviar into the cream/sugar mixture.) Whisk the egg yolk mixture on medium for a minute. Now, with the mixer on medium-low, very slowly drizzle in the warm cream. I use a metal measuring cup to scoop out small portions at a time. Make sure to continue mixing as you pour the hot mixture continuously. I kind of drizzle it in so that the cream runs down the side of the bowl, which reduces the impact of the hot cream hitting the eggs.After all of the cream is added, turn off mixer. Pour mixture into the top of a double boiler (or a glass bowl fitted over a saucepan of simmering water). Cook in the double boiler over medium heat. Stir gently but constantly as the egg/cream mixture slowly thickens. Watch the mixture: if it starts to really thicken up, remove it immediately from the heat. You want this to be more of a thick, pourable cream than a thick, heavy pudding texture. As soon as you remove the pan from the heat, set the bottom of it in a bowl of ice to stop the cooking process (but be careful not to let ice or water drip over the edge of the pan.) Stir to cool. If you need to use the cream right away, keep it in the ice bath and stir to cool. Ideally, you'll transfer the cream to a container and refrigerate it for several hours. Spoon generously (!) over fresh berries. You'll love it!
