1 pound 85 percent lean ground beef
2 tablespoons canola oil or vegetable oil
1 tablespoon bottled minced garlic (6 cloves)
¾ cup chopped red sweet pepper (1 medium)
½ cup finely chopped onion (1 medium)
½ teaspoon kosher salt
3 tablespoons chopped dark chocolate or semisweet chocolate
2 tablespoons sesame seeds
1 tablespoon chili powder
2 teaspoons paprika
2 teaspoons dried Mexican oregano or dried oregano, crushed
2 teaspoons ground cumin
½ teaspoon ground cinnamon
¼ - ½ teaspoon cayenne pepper
¼ cup dry sherry
½ cup canned tomato sauce
½ cup canned yellow hominy, rinsed and drained
½ cup sliced pimento-stuffed green olives
½ cup snipped fresh cilantro
Kosher salt

Steps:

  • In a large skillet, cook ground beef over medium heat until brown, using a wooden spoon to break up meat as it cooks. Remove meat from skillet; drain off fat. Keep meat warm.
  • In the same skillet, heat oil over medium-high heat. Add garlic; cook and stir for 1 minute. Stir in sweet pepper, onion, and the 1/2 teaspoon salt. Cook about 5 minutes or until pepper and onion are softened.
  • Reduce heat to medium; stir in chocolate, sesame seeds, chili powder, paprika, oregano, cumin, cinnamon, and cayenne pepper. Cook and stir for 1 to 2 minutes or until spices are fragrant (be careful not to burn the mixture).
  • Remove skillet from heat. Carefully stir in sherry. Return skillet to heat. Add cooked ground beef, the tomato sauce, hominy, and olives. Cook and stir until mixture is combined and thickened. Stir in cilantro. Season to taste with additional kosher salt.

This traditional Mexican meat dish, where chocolate, chilli and beef are combined in a delicious, hearty casserole, is even more flavoursome in this gorgeous version of the recipe made in a slow cooker.

1 kilogram beef chuck steak, cut into 3cm cubes
2 cup (500ml) beef stock
2 cup (500ml) water
3 chipotle peppers in adobo sauce, chopped finely
4 rindless bacon slices (260g), chopped coarsely
1 medium brown onion (150g), chopped finely
4 clove garlic, crushed
2 tablespoon tomato paste
439 gram canned black beans, rinsed, drained
410 gram canned tomato puree
2 teaspoon ground cumin
2 teaspoon ground coriander
2 teaspoon sweet smoked paprika
1/4 teaspoon chilli powder
1/2 teaspoon ground cinnamon
2 tablespoon finely grated mexican chocolate
2/3 cup (80g) grated manchego cheese
1 fresh jalapeno chilli, sliced thinly
2 green onions (scallions), sliced thinly

Steps:

  • Combine beef, stock, the water, chipotle, bacon, brown onion, garlic, paste, beans, puree and spices in a 4.5-litre (18-cup) slow cooker. Cook, covered, on low, about 8 hours. Season to taste.
  • Stir chocolate into cooker; season to taste.
  • Serve beef topped with manchego, jalapeno and green onion.
