1 whole fresh beef brisket (about 10 pounds), deckle fat removed
1 bottle (21.5 ounces) Asian honey barbecue sauce and marinade
1 cup packed brown sugar
2 tablespoons garlic powder
2 tablespoons ground cumin
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon pepper

Steps:

  • Preheat oven to 300°. Place brisket, fat side up, in a large roasting pan. Pour marinade over brisket. Bake, covered, for 4 hours. Combine remaining ingredients; sprinkle over brisket. Bake, covered, until tender, 2-4 hours longer (a thermometer inserted in brisket should read about 200°)., Preheat broiler; uncover brisket. Broil 3-4 in. from heat until fat is bubbly and slightly charred, 4-5 minutes. Cut diagonally across the grain into thin slices. If desired, skim fat from cooking juices and serve with brisket., Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
2 cups coarsely chopped cooked chicken breast
3/4 cup barbecue sauce
2 cups shredded mozzarella cheese (8 oz)
1/2 cup thinly sliced red onion
1 tablespoon chopped fresh cilantro, if desired

Steps:

  • Heat oven to 400°F for dark or nonstick pan (425°F for all other pans). Spray 15x10x1-inch pan with cooking spray.
  • Unroll dough in pan; starting at center, press dough into 15x10-inch rectangle. Bake 9 to 10 minutes or until golden brown.
  • Meanwhile, in medium bowl, mix chicken and barbecue sauce until chicken is coated with sauce.
  • Sprinkle 1 cup of the cheese over partially baked crust. Spoon and carefully spread chicken mixture evenly over cheese. Top with red onion and remaining 1 cup cheese. Bake 8 to 11 minutes or until cheese is melted. Sprinkle with cilantro. To serve, cut into 6 rows by 3 rows.
