Yield Makes 1 1/4 pounds

Number Of Ingredients 12

8 garlic cloves, minced
1 pound butter, softened and divided
? cup finely chopped shallots
1 tablespoon paprika
2 tablespoons fresh lemon juice
2 tablespoons cold veal stock (optional)
2 tablespoons chopped fresh rosemary
1?½ teaspoons chopped fresh thyme
1?½ teaspoons freshly ground black pepper
1?½ teaspoons salt
? teaspoon ground red pepper
1 teaspoon Worcestershire sauce

Steps:

  • Combine garlic and 1 tablespoon butter in a microwave-safe bowl. Cover with plastic wrap, microwave on high 2 minutes or until soft, and let cool. Repeat with shallots and 1 more tablespoon butter.
  • Beat remaining butter at medium speed with a mixer until light and fluffy. Add garlic butter, shallot butter, and remaining ingredients; beat until combined. Form into a 1 1/2-inch-thick log. Chill until firm. (Remaining butter can be stored in the freezer for 1 month.)

I saw jars of apple butter BBQ sauce at an apple orchard a few weeks ago. I thought this was a splendid idea—especially for ribs. I've scoured the Internet, and this recipe looks like the best bet. It's originally from Smuckers, (featuring their apple butter). That said, I made a large batch of apple butter (Recipe #70016), so I'm using homemade. Again, use what you can get.

Yield 3 cups

Number Of Ingredients 13

1 cup smucker's cider apple butter (or your own)
1/2 cup ketchup
1 tablespoon prepared mustard
1 teaspoon Worcestershire sauce
3 teaspoons liquid smoke
1/2 teaspoon red pepper flakes
1/2 teaspoon coarse kosher salt
1/2 teaspoon fresh ground pepper
1 cup finely chopped onion
1 teaspoon apple cider vinegar
1/2 teaspoon minced garlic
1/2 cup firmly packed brown sugar
1/2 teaspoon paprika

Steps:

  • Add everything together. Well, that's where their recipe ends. I think that's silly. So, let's continue.
  • Sauté the onion in a frying pan with a little bit of olive oil, medium heat. Cook till translucent.
  • Add the garlic, cook for about a minute.
  • Put everything into a sauce pot on medium heat, stir everything together.
  • Before a boil begins, drop the heat to low and simmer for 15-20 min., stirring frequently.
  • Take it off heat, let it cool for 30 minute (unless you're canning, of course).
  • Store it however you wish. It should keep in the fridge for 30 days, in a freezer for longer, or just can it.

  • I don’t know if you can buy powdered apple(just get the freeze dried ones if you don’t want to take this long), but it’s pretty easy to make, just time consuming. I peeled and cored 2 apples cut them into 1/4 inch thick slivers and put them in my dehydrator for 12-15 hours, then tossed them in the food processor until they were a nice powder. You can coat them in lemon juice if you don’t want them to turn brown, but they taste the same either way. You can sun dry them too, but it takes A LOT longer. You can also set them on a rack in the oven at 125-150degrees for a couple hours(not sure how long because I don’t do it that way but I’ve heard 6-8) and keep checking them until they’re dried out to where they brake like dry, stale bread. A comment was left about using fruit crisps. I’ve actually tried it before and it did indeed work, but it seemed to clump up a little. Not that big of a deal and still very good, so if you can find them at a store near you, or just order them online, it’s definitly a quick option to drying your own. Whip up the butter. Add honey and whip again. Add cinnamon and whip yet again Add the powdered apple a little at a time(1/2 tbsp roughly) whipping in between each addition. Check the flavor after adding half of the powdered apple since apple’s differ in size and aren’t exact measurements and just mix to taste.
