Baked French Fries (Oven Crisp!) image

If crispy oven fries do not make their way into your life nearly enough, here's a delicious reminder to change that immediately.

Number Of Ingredients 10

4 large Russet or Yukon Gold potatoes (about 2.5 pounds)
1/4 cup garlic flavored olive oil
1 tsp sea salt
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground black pepper
1/4 tsp smoked paprika
1/4 tsp dill weed
1 tbsp grated Parmesan cheese
fresh parsley for garnish (optional)

Steps:

  • Cut potatoes into fries and add to a large bowl of water. Allow to soak for 30 minutes.
  • Preheat oven to 375° F and line 2 large baking sheets with parchment paper. Set aside.
  • Drain potatoes and rinse them well under cold water. Dry thoroughly on paper towels. (Toss any extra small or thin fries as they will burn during cooking.)
  • Add potatoes to a large mixing bowl and toss thoroughly with garlic olive oil.
  • In a small mixing bowl combine salt, garlic powder, onion powder, black pepper, paprika and dill weed. Add to the fries and toss to coat.
  • Place French fries in a single layer on prepared baking sheets and bake for 20 minutes.
  • Stir fries well, rotate the baking sheets, and increase oven temperature to 450° F. Bake for another 20-25 minutes or until golden brown and crispy.

The key to achieving perfectly crisp “fries” is heating your sheet pan in a 500-degree oven for a good 10 minutes. When you toss the potatoes onto the blisteringly hot pan, magic happens: The potatoes sear and develop a truly crunchy crust. In terms of seasoning, we keep it simple with just salt and pepper, but feel free to experiment with adding a bit of chili or garlic powder, smoked paprika or cayenne to the mix.

1 1/2 pounds russet potatoes (about 3 large), cut into 1/4- to 1/2-inch-thick sticks
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Arrange one oven rack at the lowest point. Place a large rimmed baking sheet there and heat oven to 500 degrees.
  • In a large bowl, toss together potatoes, the oil, salt, pepper and any additional seasonings. Carefully spread potatoes out on the preheated baking sheet and return to oven’s lower rack. Roast until slightly golden and crispy, tossing after 15 minutes. 
  • Reduce oven temperature to 425 degrees and bake 10 to 15 minutes more.

  • Update! Newest Version: When I am in a hurry, and we need potatoes really fast for a meal, I zap a large potato with peeling on in the microwave until almost done, then I cut it into chunks. I use a cast iron skillet and put olive oil in it, not much, put in the taters and season them with the same seasonings as the fries (except the Parmesan cheese because it scorches). As soon as they are nicely browned, I remove them to a stainless steel bowl (it keeps them hot) and toss them with the Parmesan cheese. Voila! You have delicious "roasted" potatoes with your meal. Great with bacon and eggs, too!
