A fresh tomato-and-basil topping on panko-crusted chicken cutlets makes an easy meal for family or casual entertaining.

¼ cup all-purpose flour
1 large egg
2 tablespoons water
½ cup panko breadcrumbs, preferably whole-wheat
¼ cup grated Parmesan cheese
1 pound chicken cutlets, trimmed
½ teaspoon ground pepper, divided
¼ teaspoon salt, divided
Cooking spray
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
1 clove garlic, grated
2 cups cherry tomatoes, cut into eighths
? cup slivered basil leaves

Steps:

  • Preheat oven to 425 degrees F. Place a wire cooling rack on a large rimmed baking sheet.
  • Spread flour in a shallow dish or pie pan. Whisk egg and water in another shallow dish. Combine panko and Parmesan in a third dish.
  • Sprinkle chicken with 1/4 teaspoon pepper and 1/8 teaspoon salt. Dredge both sides of each piece of chicken in the flour, shaking off any excess. Dip in the egg mixture, then dredge in the panko mixture. Coat both sides of the cutlets with cooking spray and place on the prepared rack. Bake until cooked through and starting to brown, 15 to 20 minutes.
  • Meanwhile, whisk oil, vinegar, garlic and the remaining 1/4 teaspoon pepper and 1/8 teaspoon salt in a medium bowl. Add tomatoes and basil and stir to combine. Serve over the chicken.

I took a favorite recipe and modified it to my preference. It's reminiscent of bruschetta and the best part is the entire dish cooks in one casserole dish for less mess!

1 cup uncooked orzo pasta
1 cup chicken broth
4 tablespoons butter, melted, divided
4 cloves garlic, minced
¾ teaspoon salt, divided
¼ teaspoon ground black pepper
2 cups halved cherry tomatoes
1 pound skinless, boneless chicken breast halves
1 teaspoon Italian seasoning
¼ teaspoon red pepper flakes
1 cup shredded mozzarella cheese
¼ cup fresh basil pesto
¼ cup balsamic glaze
2 tablespoons thinly sliced fresh basil or basil chiffonade

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Spread orzo evenly in the prepared baking dish. Add broth, 2 tablespoons melted butter, garlic, 1/2 teaspoon salt, and pepper; stir to combine. Spread tomatoes evenly over top.
  • Place chicken breasts on a cutting board and trim any visible fat. Drizzle remaining 2 tablespoon melted butter over chicken, then sprinkle with Italian seasoning, remaining 1/4 teaspoon salt, and red pepper flakes. Place chicken over the tomatoes and cover the baking dish with foil.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove foil and sprinkle chicken with mozzarella cheese. Bake until cheese is melted, 5 to 7 minutes longer.
  • Drizzle pesto and balsamic glaze over each serving and garnish with basil.

Bruschetta Chicken Baked in One Pan with Balsamic and Mozarella

Two secrets to delicious Chicken with loaded Bruschetta flavor:

1. Season Every Layer: 

Seasoning raw chicken before cooking is key to good chicken flavor. Any recipe, grilled, baked or sauted will benefit from seasoning. This simple trick will ensure always seasoned "never-bland" chicken.

Season bruschetta topping i.e. diced tomatoes, and basil with fresh chopped garlic, olive oil and balsamic. Even though you can drizzle balsamic glaze on chicken (recipe in notes) after chicken is ready. A little bit of balsamic vinegar mixed with tomatoes brings out real savory bruschetta flavors. The garlic, sweet and tangy balsamic and fragrant fresh basil. That's it! But so much flavor.

In-fact, this is my go-to recipe to serve Bruschetta Bread. Toasted baguette on side and it is a perfect appetizer.

Note: When making bruschetta; make sure to always remove seeds from tomatoes. It is important for good flavor and less liquid in tomatoes . I reserve seeds to add in stew/curry/soup later.

2. Top Chicken with Bruschetta Before Baking:

Covering chicken with tomatoes-basil bruschetta and Mozzarella before baking makes a huge difference in flavor and keeps the chicken juicy.

Here is why I cover chicken and bruschetta with layer of mozzarella before baking:

  1. Bruschetta of tomatoes, garlic, balsamic add another layer of flavor in chicken without over cooked tomatoes.
  2. Cheese comes out nicely melted, and bubbling. There is not whole lot of cheese per serving but the flavor it add it delicious.
  3. Baking everything together makes this Bruschetta Chicken recipe a one-pan Chicken dinner. Just break bread, boil pasta or rice for winner chicken dinner.

Bruschetta Chicken with Lemon-Herb Pasta

Quick Recipe Tip: Pasta in picture is Lemon-Parmesan Macaroni. Combine warm (just boiled and drained) half pound pasta with 1/3 cup parmesan cheese, zest of one lemon, 2 cloves of fresh grated garlic, parsley, salt and black pepper. Serve and enjoy!
