Yield 8 servings

Number Of Ingredients 15

Stew
3 tablespoons Land O Lakes® Butter
1 large (1 cup) onion, chopped
1 medium (1 cup) green bell pepper, chopped
1 cup shredded or matchstick carrots
1 (14-ounce) package turkey kielbasa, * sliced 1/4 inch, cut in half
1 (28-ounce) can baked beans
1 (15.5-ounce) can tomato sauce
1 (14.5-ounce) can petite-diced tomatoes
1/2 teaspoon garlic powder
Garnish
8 (3/4-ounce) slices Land O Lakes® Deli American
Whole grain tortilla chips
Shoestring potato sticks
Shredded or matchstick carrots

Steps:

  • Melt butter in large saucepan until sizzling; add onion, bell pepper and carrots. Cook over medium-high heat, stirring occasionally, 4-6 minutes or until vegetables are crisply tender.
  • Reduce heat to medium; add kielbasa. Cook, stirring occasionally, 4-6 minutes or until kielbasa begins to brown. Stir in all remaining stew ingredients. Continue cooking, stirring occasionally, 8-10 minutes or until mixture comes to a boil. Reduce heat to low; cook 20 minutes to blend flavors.
  • Spoon stew into individual serving bowls. To create scarecrow faces, cut each slice of cheese with 3-inch pumpkin or round cookie cutter. Cut triangles for eyes using sharp knife. Place cheese cut-outs onto bowls of stew. Immediately place shoestring potato sticks on each side of cheese for hair; place tortilla chip on top part of cheese for hat. Create mouth of scarecrow with shredded carrots.

HEARTY BEAN STEW RECIPE: HOW TO MAKE IT
From Regina, Saskatchewan, Penny Giles writes, “A Canadian prairie winter can be bone-chilling. A bowl of this meatless stew over couscous, rice or with cornbread is all it takes to warm us up. It’s hearty, tasty and—unbeknownst to your family—healthy, too!“ stew can be served over rice (note to editors: this is not meatless because of the beef broth)

HOMEMADE BAKED BEANS RECIPE | SOUTHERN LIVING
A dish of baked beans is a welcome addition to any backyard barbecue, family reunion potluck, or football tailgate. Even though you may not have time to start from dried beans, this recipe allows you to turn out a savory and tasty dish based on canned beans.Start by frying up some bacon (because we are firm believers that most things taste better with bacon) and sautéing an onion. Make a sweet and spicy sauce using brown sugar, ketchup, Worcestershire sauce, dry mustard, and your choice of sorghum syrup or molasses – two of the South's favorite sweeteners. Stir the sauce and onions into the beans, top with bacon and bake. Make this the night before and omit topping with bacon until you are ready to put the dish in the oven. Need ideas for leftover baked beans? Serve on top of pulled pork and slaw on a bun, stir in leftover chicken, ground beef, or sausage and reheat, or add to a pot of stew for extra taste and texture.

  • Adjust oven rack to lower-middle position and heat oven to 325 degrees.  Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.  Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.  Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).  Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
