If you love fruitcake, these cookies will make you very happy! This recipe was shared by a friend who brought me these goodies! Keep these in the freezer for rainy days when you need a comforting dessert. Recipe does not include freezing time.

Number Of Ingredients 9

1 cup butter
1 cup powdered sugar
1 whole egg
1/4 teaspoon salt
2 1/2 cups all-purpose flour
1/4 teaspoon cream of tartar
1/2 cup pecans, chopped
1/2 cup candied pineapple, diced
1 cup candied red cherries or 1 cup green cherries (or mixture of both)

Steps:

  • Cream butter and sugar together.
  • Beat in eggs.
  • Stir in dry ingredients.
  • Stir in pecans and fruit.
  • Form into rolls 1 1/2 inches in diameter.
  • Wrap in plastic wrap; place in resealable plastic bag.
  • Freeze.
  • TO BAKE: Preheat oven to 375 degrees.
  • Using wet sharp knife, slice into thin slices (1/4 inch thick), and place on greased baking sheet.
  • Bake 6-8 minutes.

Peanut butter is chocolate’s long-time best friend and in these treats it compliments chocolate’s richness giving each bite even more of an indulgent taste. No baking is required for these little goodies and they only take about 15 minutes to mix up. They’re best enjoyed when served frozen. Let them sit at room temperature for 10 minutes before serving if you prefer your frozen desserts on the softer side. You can easily double or triple the recipe to make ahead and keep them on hand. Transfer them from the wax the paper and store in freezer safe container or plastic zip top bag.

Steps:

  • Mix milk, cocoa powder and sugar in a small saucepan over low heat.
  • Bring to a boil and then remove from heat. Add peanut butter and stir until melted.
  • Stir in oatmeal and oil.
  • Drop 16 spoonfuls of batter onto a baking sheet lined with wax paper. Freeze for at least four hours; they are better the day after you make them. Yields 1 cookie per serving.
