This baked asparagus side dish is so easy to make, yet it provides a variation to the usual vegetables. Try different varieties of olive oil, such as roasted garlic, or basil olive oil. I have also added garlic (fresh, minced in jar or garlic powder). I often use this method to cook broccoli florets with delicious results.

1 lb asparagus
olive oil
1 tablespoon toasted sesame seeds
salt and pepper
1 lemon

Steps:

  • Break off ends of asparagus stalks.
  • Put in baking pan or dish.
  • Drizzle olive oil over asparagus (amount to liking).
  • Add salt and pepper to taste.
  • Spritz it with fresh lemon juice.
  • Finally, sprinkle sesame seeds on top of asparagus.
  • Bake at 375 degrees for (about 12 minutes-depending on thickness of stalk) or until fork tender.
  • Serve with lemon wedges.

These Oven Bacon Wrapped Asparagus bundles are easy and quick to assemble. They are brushed with a simple yet delicious honey mustard glaze making them the hit of your dinner party.

1 1/4 pound(s) asparagus
4 - thick slices bacon
1 tablespoon(s) red wine vinegar
1 teaspoon(s) dijon mustard
1 teaspoon(s) honey
1 clove(s) garlic minced
1 teaspoon(s) dried or fresh chive
1/8 teaspoon(s) fresh ground pepper
3 tablespoon(s) olive oil

Steps:

  • Preheat oven to 375 degrees.
  • Wash and trim asparagus; removing the tough lower portion of the stem. (You will need to split out the asparagus into four equal bundles). Wrap one slice of bacon around 5-6 spears of asparagus and place on baking sheet.
  • In small bowl combine red wine vinegar, Dijon mustard, honey, garlic, chives and pepper. Whisk in olive oil. Pour half of the mustard vinaigrette into a separate bowl and set aside. Take remaining vinaigrette and using basting brush baste asparagus bundles. Place cookie sheet in oven and bake for 15-20 minutes. Turn broiler on to brown the bacon the last 1-2 minutes of cooking. Stay close by as I have always found broilers unpredictable.
  • Serve remaining honey mustard vinaigrette with asparagus bacon bundles.

A very simple method of cooking asparagus, where they are wrapped in foil and baked, with nothing but a little butter and salt. So easy and yet so delicious!! My 2 1/2 year old daughter liked it too! I've only tried this once and I followed the recipe exactly as set out, but I'd like to try it again, perhaps putting a few sprigs of herbs in with it. You could also try herb butter instead of ordinary butter. You can omit the salt if you like. If you are making larger quantities you might need to make more than one "parcel". You could even wrap each portion separately and serve them in the foil wrappers - I ate mine straight out of the foil, and I think it made them even nicer as they're still steaming hot and in their cooking juices, and you can keep all that flavour and aroma trapped in the parcel until you're ready to eat it! Would make a really good starter served like this. Although I suppose it depends what kind of guests you've got - if they're used to silver platters they might not be so impressed with silver foil!! But I would be! :)
