From About.com...a garlicky sauce is a great way to add extra flavor to stir-fry dishes, particularly seafood dishes. The seasonings for garlic sauce are available in the international food section of many local supermarkets. Use the sauce in stir-fry dishes or any other Asian type dishes. Note: Instead of using 2 types soy sauce, I just use 2 tablespoons dark.

2 tablespoons rice vinegar
2 tablespoons granulated sugar
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
2 teaspoons chinese rice wine or 2 teaspoons dry sherry
1/4-1/2 teaspoon chili sauce (Sriracha to taste)
1/4 teaspoon sesame oil
1 1/2 teaspoons cornstarch
1 tablespoon water
1 tablespoon vegetables or 1 tablespoon peanut oil
3 -4 medium garlic cloves, finely chopped

Steps:

  • Combine the rice vinegar, sugar, soy sauces, rice wine or sherry, chili sauce and sesame oil in a small bowl, stirring to combine. In a separate small bowl, dissolve the cornstarch in the water.
  • Heat 1 tablespoon oil over medium heat in a saucepan. Add the garlic and cook, stirring until aromatic (about 30 seconds).
  • Quickly restir the sauce, add it into the saucepan and bring to a boil, stirring. (This will take about a minute).
  • Re-stir the cornstarch/water mixture and add it to the sauce, stirring to thicken. Refrigerate after use.

Asian Spicy Garlic Edamame is a flavor explosion in your mouth! An easy, totally addicting snack or side dish!

Number Of Ingredients 11

1/2 tsp orange zest
1/4 tsp cayenne pepper
1 tbsp sesame seeds (toasted)
freshly ground pepper (to taste)
1/4 cup reduced-sodium soy sauce (or gluten-free soy sauce)
1/4 cup reduced-sodium chicken or vegetable broth
1 tbsp honey
2 tsp canola or vegetable oil
4 cloves garlic (chopped)
1 tsp grated ginger
5 cups edamame (in pod*)

Steps:

  • *If frozen, place edamame in a microwave-safe bowl and heat edamame for 2-3 minutes, or until defrosted.
  • In a small bowl, combine orange zest, cayenne, sesame seeds and black pepper.  Set aside.
  • In a small sauce pot, bring soy sauce, chicken broth and honey to a slow boil over medium heat.
  • Continue to gently boil until sauce is reduced by half, about 5 to 6 minutes.
  • Meanwhile, heat a large non-stick skillet or wok over medium-high heat.
  • Add the oil, garlic and ginger and sauté for 30 to 60 seconds.
  • Add edamame and orange peel/spice mixture and toss to evenly coat.
  • Add sauce to the edamame, toss and cook for an additional 2-3 minutes, or until sauce is slightly thickened and edamame is heated through.

  • To Prep First, combine all the ingredients for the chicken marinade in a mixing bowl. Then add your chicken to the marinade and mix well. Cover and leave in the fridge to marinate for about 20 minutes. In another bowl, mix all the ingredients for the garlic sauce and set aside for later. When the chicken has marinated enough, get it from the fridge and combine with the batter ingredients. Using your hands or a spatula, mix the chicken and the batter well. To Cook Heat up enough oil for deep frying in a wok until it reads 175°C on a thermometer. Add the chicken to the hot oil one at a time. Remove them from the oil when they float and drain off the any excess oil. Deep fry the chicken for another round to give them a nice crisp. Remove from the wok and drain off any excess oil. Place on paper towels to remove as much oil as possible and set aside for later. In a hot pan, add the chilli oil, leek and dried chillies. Stir fry until fragrant over medium high heat. Add the cubed vegetables to the pan and stir fry until the onions start to turn translucent. Add the garlic sauce and mix well. Allow it to cook down into a thicker sauce. Finally add the deep-fried chicken to the pan and toss it to coat the chicken with the sauce. Transfer to a serving dish and serve with steamed rice.
