1/2 cup unsalted butter, softened
1 cup sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup flour
2 granny smith apples, peeled, chopped fine
1/2 cup chopped pecans
1/2 cup unsalted butter
1 cup minus 1 tbl. brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup whipping cream

Steps:

  • Cake:.
  • Cream butter and sugar, then add egg and beat.
  • Add rest of dry ingredients and beat til mixed.
  • Fold in apples and pecans. Pour into greased and floured large round, deep cake pan. *Use greased and lightly floured parchment paper
  • on the bottom for easier removal.
  • Bake at 350º for 35-40 minutes.
  • Cool a bit, turn out onto rack to cool completely. *Can serve warm, too.
  • Meanwhile, make caramel sauce.
  • Caramel sauce:
  • Melt butter, brown sugar and salt in pan over low-med heat,
  • stirring, for about 2-3 minutes.
  • Remove from heat, stir in vanilla and cream and stir well till not grainy.
  • Drizzle lots of caramel sauce over cut cake slices when serving.
  • Sprinkle chopped pecans on top of that if desired.
  • 8 servings.

2 1/4 cups all-purpose flour
1/2 cup sugar
3/4 cup firmly packed brown sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon curry powder, if desired
3/4 cup Land O Lakes® Butter melted
1/2 cup milk
3 large Land O Lakes® Eggs
2 teaspoons vanilla extract
2 large (2 1/2 cups) tart cooking apples, cubed 1/2 inch
3/4 cup chopped walnuts
Caramel Butter Sauce
3/4 cup firmly packed brown sugar
1/2 cup Land O Lakes® Heavy Whipping Cream
3 tablespoons Land O Lakes® Butter
1 teaspoon vanilla extract
Land O Lakes® Heavy Whipping Cream sweetened, whipped, if desired

Steps:

  • Heat oven to 350°F. Grease and flour 13x9-inch baking pan; set aside.
  • Combine flour, sugar, 3/4 cup brown sugar, cinnamon, baking powder, salt, nutmeg, baking soda and curry powder, if desired, in bowl. Add melted butter, milk, eggs and 2 teaspoons vanilla. Beat at medium speed, scraping bowl often, until well mixed. Stir in apples and walnuts.
  • Spread into prepared pan. Bake 35-40 minutes or until top springs back when touched lightly in center. Cool completely.
  • Just before serving, combine 3/4 cup brown sugar, whipping cream and butter in 1-quart saucepan. Cook over medium heat, stirring constantly, 3-4 minutes or until sugar is dissolved. Stir in 1 teaspoon vanilla. Drizzle sauce over each piece of cake. Dollop with whipped cream, if desired.
