EASY PUMPKIN PANCAKES RECIPE | ALLRECIPES

Easy Pumpkin Pancakes Recipe | Allrecipes image

Threw this together for my family for Thanksgiving breakfast and it was a hit. The boys asked if it was pumpkin pie! If desired, you can add chocolate chips after pancakes are poured onto the skillet, pat them with a bit of batter so they don't stick when turned.

FLUFFY PUMPKIN PANCAKES RECIPE - NYT COOKING
Crisp fall mornings call for cozy breakfasts, and these fluffy pumpkin pancakes are just the thing to warm you right up. Packed with pumpkin and a sprinkle of cinnamon and vanilla, they feel and taste special, but are quick to stir together. The buttermilk and pumpkin make the batter quite thick, but they will spread. Be sure to leave lots of room between the pancakes when cooking them.

PUMPKIN PANCAKES WITH SPICED MAPLE SYRUP RECIPE | REAL SIMPLE
The ideal fall morning involves a cozy mug of hot coffee, a fuzzy sweater, and these pumpkin pancakes drizzled with warm spiced maple syrup. Both the pancakes and the syrup here call for pumpkin pie spice, which you can purchase at any grocery store or make your own using a simple combination of ground cinnamon, ginger, nutmeg, cloves, and allspice (find our recipe for DIY pumpkin pie spice here). When whisking the wet ingredients into the dry ingredients, make sure to be gentle—over-mixing will result in flat, tough pancakes due to overdevelopment of gluten. If you see a few lumps left behind in the batter, don't sweat it.
