Here's another brilliant (and easy!) way to use up a garden full of zucchini. These tasty loaves are freezer-friendly, so bake up a few batches and save for later.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 tablespoon ground cinnamon
1/2 cup vegetable oil
1/4 cup milk or water
3 eggs
2 cups coarsely shredded zucchini (about 2 medium)

Steps:

  • Heat oven to 350°F. Spray bottoms only of two 8x4-inch loaf pans with cooking spray.
  • In large bowl, stir cake mix, cinnamon, oil, milk and eggs until well blended. Add zucchini; mix well. Divide batter evenly between pans.
  • Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour. Wrap tightly, and store at room temperature up to 2 days.

Our go-to basic muffin recipe works every time. Add whatever ingredients you like to mix up the flavour combinations.

2 cup self-raising flour
1/2 cup caster sugar
3/4 cup milk
125 gram melted, slightly cooled butter
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12-hole muffin pan or line with paper patty cases.
  • Sift flour into a large bowl. Stir in sugar.
  • In a large jug, whisk milk, butter, eggs and vanilla together.
  • Make a well in centre of dry ingredients. Add milk mixture all at once. Mix lightly, until just combined. Be careful not to over-mix. Divide mixture among recesses.
  • Bake 15-20 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes before transferring to a wire rack to cool completely. Dust with icing sugar, if liked.
