OLD-FASHIONED RECIPE - NYT COOKING

Old-Fashioned Recipe - NYT Cooking image

The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.) It is a stirred drink, usually built in the glass in which it is served. Both rye and bourbon are suitable base spirits. For the sweetener, purists muddle up a sugar cube with water and a couple dashes of bitters, but simple syrup works as well. Twists can be orange, lemon or both (known as “rabbit ears”). A fruited version of the drink came into vogue after Prohibition and involves the muddling of a cherry and orange slice along with the sugar. That version remains widespread, but we advocate the more elemental rendition that took hold in the late 1800s, one that allows the flavors of the whiskey to shine.

Provided by Robert Simonson

Total Time 2 minutes

Yield 1 drink

Number Of Ingredients 4

1 sugar cube (or 1 bar spoon simple syrup)
2 dashes Angostura bitter
2 ounces rye or bourbon
Orange twist

Steps:

  • Muddle the sugar cube and bitters with one bar spoon of water at the bottom of a chilled rocks glass. (If using simple syrup, combine bitters and one bar spoon of syrup.) Add rye or bourbon. Stir.
  • Add one large ice cube, or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip orange twist on the side of the cube.

  • Put all the ingredients in a Collins or Highball glass over lots of ice, stir gently and garnish with a wedge of lime. 3 TWISTS Orange mule Bring a sunburst of citrus to the brooding dark & stormy by making it with two dashes of orange bitters instead. Angostura orange bitters will give the drink more spicy, marmalade notes, while Bitter Truth orange bitters taste much more of freshly-peeled orange zest. Then make the drink as normal and garnish with a lime wedge. Minty mule Take inspiration from the mojito and mix up a dark & stormy twist with 50ml dark rum, 25ml lime juice, bitters and ginger beer served over crushed ice, garnished with a wedge of lime and a fragrant sprig of mint (for best results, give the mint a clap between your palms before tucking it into the drink as this will help to release the aromatic oils). Then add two straws and enjoy. Mexican mule Tequila really loves ginger and lime and all three come together beautifully in this Mexican twist on the mule. Just make the drink as normal but instead of rum, use a nice lightly-aged reposado tequila like Ocho or Olmeca Altos – it will give the drink a whole new layer of interest.

TOM AND JERRY RECIPE - NYT COOKING - RECIPES AND COOKIN…
This drink has nothing to do with the cartoon cat and mouse, or Jerry Thomas, the celebrated New York barman of the 1800s, who often boasted of inventing it. It is a rich holiday elixir, a relative of eggnog that flourished in America in the 19th and early 20th centuries, and is frequently (though not definitively) credited to Pierce Egan, the English chronicler of sports and popular culture. Robert Simonson brought this version of the drink, which is especially popular in Wisconsin and is bordering states, to The Times in 2012. It is adapted from Audrey Saunders, the owner of the Manhattan cocktail bar Pegu Club. She decreased the sugar and added Angostura bitters and vanilla. “It makes a huge difference,” she said. It’s best on snowy days, when it can warm and comfort from within.

Fill with boiling milk, stirring briskly with a small whisk while adding, so batter and milk are well mixed. Dust with nutmeg.
