1 lb. bacon
1 can (11 oz) refrigerated Pillsbury™ Original French Bread
4 oz. (1 cup) shredded sharp Cheddar cheese
2 oz. thinly sliced cooked deli turkey
2 oz. thinly sliced cooked deli ham

Steps:

  • Heat oven to 350°F. Spray cookie sheet with nonstick cooking spray. Cook bacon until crisp. Drain on paper towel; crumble.
  • Unroll dough. Sprinkle cheese over dough. Top with turkey, ham and bacon. Starting with long side, roll up dough; press edges to seal. Make 3 to 4 slits in top of loaf. Place on sprayed cookie sheet.
  • Bake at 350°F. for 23 to 28 minutes or until golden brown. Cool 5 minutes. Cut into 1-inch diagonal slices.

SCD Recipe: Grain-Free Sandwich Rounds | Happy Gut For Life image

Number Of Ingredients 7

1 1/2 cups almond flour
3/4 tsp baking soda
1/4 tsp salt
1 tsp lemon juice
2 large eggs
2 cups shredded hard cheese ((I used sharp white cheddar for this))
1/2 cup Farmers Cheese (or DCCC) (You can substititue strained yogurt (make sure it's very thick like cream cheese))

Steps:

  • In a large mixing bowl, combine almond flour, baking soda, and salt until combined
  • Add eggs and lemon juice, whisk to combine with dry ingredients
  • Add shredded cheese and farmers cheese to a medium saucepan
  • Heat over medium-low heat until cheese melts together, stirring frequently
  • Once cheese is melted remove from heat and add it to the almond flour mixture
  • Stir to thoroughly combine - make sure there are no big lumps of just cheese or almond flour mixture
  • Knead with hands until the mixture becomes dough-like
  • Place dough in freezer for 15 minutes or refrigerator for at least 30 minutes to firm up
  • Heat oven to 400 degrees
  • Line baking sheet with parchment paper
  • Divide dough into six parts, roll sections between hands to form a long piece, and form into a ring on the baking sheet
  • Bake for 15 - 20 minutes until rolls are firm and golden brown
  • Cool completely and store in an air-tight container in the refrigerator for up to a week
  • Toast in a toaster oven or frying pan to reheat and serve

It was different from what I usually make and fun. I am not sure how much meat I put on though - just dumped. I also used some provolone on half and it was good too. Thought I might try tomatoes and mustard. Don't know what it would do for sure.

I've tried to make a low calorie homemade bread for years. When they came out with thin buns, it inspired this recipe. One sandwich bun is 1 Weight Watcher point. TIPS: You'll need a 4" biscuit or cookie cutter for these to be consistent. The vital wheat gluten improves the texture and rise, but you don't have to use it. Just add 2 more tablespoons of flour if you omit it. And white flour will work just fine if you don't want whole wheat. Just add more flour in place of the extra bran called for in the recipe.
