500 g starch
150 g yogurt (non-skim)
200 g sugar
cooking oil
2 -3 tablespoons rose water

Steps:

  • Mix starch, 1-2 spoons of sugar, and water, then add yogurt and mix well until the mixture is even and smooth.
  • Heat oil in a pan until hot.
  • Pour the mix through a funnel into the pan creating round lattice shapes about 5-6 cm in diameter.
  • Turn heat down and fry fully on one side, then on the other.
  • Mix well sugar, rose-water, and a glass of water.
  • Heat until water comes to a boil, and the syrup thickens. Remove from heat.
  • Soak zoolbia in the syrup for about 5 minutes, then serve.

  • Prepare saffron: Put saffron in small heatproof bowl and stir in2 Tbsp boiling water. Let cool to room temp, then let steep at least 1 hr. or refrigerate overnight. Meanwhile, prepare batter: Into medium bowl, sift together cornstarch, cake flour, and baking soda. In large bowl, using electric mixer, combine yogurt, rosewater, butter, cardamom (if using), and half of steeped saffron water. Add flour mixture to yogurt mixture, beating until batter is very smooth and the consistency of glue (add water 1 Tbsp at a time to adjust). Scrape batter into piping bag (or gallon-size resealable bag) and let rest 20 min. While batter rests, make syrup. In saucepan, combine sugar, honey, water, and rosewater and bring to a boil. Reduce heat, add zest (if using) and remaining saffron, and simmer, stirring occasionally, 2 min. Remove from heat and stir in cardamom if using. Fill deep skillet with 2 in. canola oil and heat to 375°F. Put small tip on piping bag or snip 1 corner off plastic bag. Pipe batter into oil in swirling motion, similar to how you’d pipe a funnel cake, and fry until golden brown, 30 sec. per side. Using tongs, carefully transfer to wire rack set in baking sheet to drain. While still warm, dunk zoolbia into syrup 30 sec. to 2 min., depending on how saturated you want them. Gently shake off excess syrup and place back on wire racks to drain syrup. Serve warm or store with waxed paper between them.

  • To make the syrup: Combine sugar, water, and lemon juice in a medium saucepan. Place over medium heat, and simmer until thick enough to coat the back of a spoon, about 10 minutes. Add rose or orange-blossom water, and simmer for a few seconds longer. Remove from heat, and let cool. Cover, and refrigerate until ready to use. To make the batter: Whisk to combine flour, salt, and yeast in a large bowl. Gradually stir in water, beating vigorously until smooth and elastic, about 10 minutes. Cover with plastic wrap, and let rise in a warm place for at least 1 1/4 hours. Uncover, and beat once more. Cover, and let rise again, about 30 minutes. Heat 2 inches of oil in a deep saucepan over medium-high heat until the oil reaches 375 degrees. Dip two tablespoons in a small bowl of oil to coat. Working in batches, spoon about a tablespoon of batter into hot oil. Fry, turning occasionally, until puffed, crisp, and golden. Reduce the heat a little so that the fritters are thoroughly cooked without getting too brown. The light batter produces irregular rather than round fritters. Using a slotted spoon, remove fritters, and transfer to a paper towel-lined baking sheet to drain. Dip fritters in the cold syrup for a few seconds to coat and soak up some syrup. These are best served hot, but they may also be served at room temperature.
