Number Of Ingredients 9

3 large Zucchini (or 1 package Crazy Fresh Zoodles)
1.5 Tbsp. Canola oil, divided
1/2 small jalapeno, seeded and minced
1.5 pounds boneless skinless chicken breasts, cubed
1 tsp. ground cumin
1/2 tsp. coarse salt, divided
1/4 tsp. ground black pepper
Zest and juice of 1 lime
3/4 cup fresh cilantro, chopped

Steps:

  • Using a veggie spiralizer or madoline, make zucchini noodles. Transfer to a bowl and set aside {If you don't have special equipment, chop zucchini into noodle-like pieces.} Or add zoodles to a bowl.
  • Heat 1 Tbsp. oil in large skillet on medium-high. Add jalapeno and chicken and sauté until chicken is brown, stirring occasionally. Stir in cumin, salt and pepper. Transfer to a bowl and set aside.
  • Add remaining oil and zucchini noodles and sauté an additional 1-2 minutes, until zucchini starts to soften. Add chicken mixture back in the skillet with zucchini noodles and stir in lime zest and juice and cilantro. Taste and adjust seasoning, if necessary. Serve.

You'll end up with more peanut sauce than you need in this zucchini noodle recipe, and that's a good thing! It makes a great dip or stir-fry sauce.

¾ cup creamy natural peanut butter
¾ cup hot water
¼ cup lime juice
2 tablespoons light brown sugar
2 tablespoons reduced-sodium tamari or soy sauce
1?½ tablespoons fish sauce
1 teaspoon hot sauce, such as Sriracha
1 teaspoon grated garlic
4 cups spiralized zucchini (1 large)
3 cups spiralized red cabbage (about 1/2 small head)
1 cup spiralized carrot (1 large)
½ cup chopped fresh cilantro
2 cups shredded rotisserie chicken (8 ounces)
¼ cup chopped unsalted roasted peanuts

Steps:

  • Combine peanut butter, water, lime juice, brown sugar, tamari (or soy sauce), fish sauce, hot sauce and garlic in a blender. Pulse until smooth.
  • Combine zucchini, cabbage, carrot and cilantro in a large bowl. Add 1 cup of the dressing (reserve the rest for another use) and toss to coat. Top the salad with chicken and peanuts. Serve immediately.
