Here's what you need: zucchinis, panko breadcrumbs, grated parmesan cheese, garlic powder, dried basil, salt, pepper, eggs, plain greek yogurt, lemon juice, fresh chives, salt, pepper

Number Of Ingredients 13

2 zucchinis
1 cup panko breadcrumbs
½ cup grated parmesan cheese
1 tablespoon garlic powder
1 tablespoon dried basil
1 teaspoon salt
1 teaspoon pepper
2 eggs
1 cup plain greek yogurt
1 tablespoon lemon juice
2 tablespoons fresh chives
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat oven to 425°F (220°C).
  • Cut zucchini into fries and set aside.
  • In a large bowl combine panko, parmesan, garlic powder, basil, salt, and pepper.
  • Whisk eggs in a shallow bowl or dish.
  • Dip zucchini in eggs, coating evenly, and then toss in bread crumb mixture.
  • Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway.
  • Prepare dip while fries are baking. Combine all dip ingredients in a small bowl and set aside in the refrigerator until ready to use.
  • Enjoy!

2 lb or any similar large potatoes russet potatoes
¼ tbsp salt
¼ tbsp smoked paprika
2 tbsp garlic powder
1 tsp onion powder
½ tsp ground black pepper
½ tsp ground cumin
½ tsp dried basil
¼ tsp ground celery seed
¼ tsp dried oregano
¼ tsp dried thyme
4 tbsp vegetable oil
Ketchup & Ranch dressing

Steps:

  • First, preheat your oven to 400 degrees F. In a small bowl, mix together your spices.
  • Scrub your potatoes using the vegetable scrubber and cut them into wedges or little fry slices.
  • Place the potatoes in a large bowl filled with cold water.
  • Let it soak for 5 minutes, drain out the water, & dry out with a paper towel.
  • In a large mixing bowl, add vegetable oil and mix, add spices and mix until all are coated.
  • Transfer the potatoes to a baking sheet, lay them in a single layer with some space between them.
  • Bake for 20 minutes.
  • Brush the top of the fries with the spice mixture, and then flip.
  • Allow the fries to cool for 1 to 2 minutes and then serve with ketchup and ranch!

Another tip - I prefer the thinner batter for a lighter and crunchier coating on the veggies (the thicker batter just seems to be too doughy for our tastes).
