½ cup plain yogurt
2 sprigs fresh mint, chopped
1 teaspoon white sugar
1 teaspoon salt
¼ teaspoon cayenne pepper, or to taste

Steps:

  • In a small bowl or blender, stir together the yogurt, chopped mint, sugar, salt and cayenne until well blended. Serve immediately or chill for a while to let the flavors come together.

Greek Yogurt Sauce with Garlic and Mint Recipe | Cooking Light image

If you have a well-stocked pantry and fridge, you likely have everything you need on hand to whip it up for any weeknight dinner. A squeeze of lemon juice makes tangy Greek yogurt even better, but you can cool the bite with a bit of extra-virgin olive oil and fresh mint. We really prefer this dip with a fatty fish like salmon or arctic char, but it's equally good with lean chicken or pork. If you've got time to spare, let this dip sit for 30 minutes to an hour so the flavors can really marry. It's even better the next day.

1 tablespoon finely chopped fresh mint
1 tablespoon fresh lemon juice
1 teaspoon extra-virgin olive oil
1 teaspoon honey
1/4 teaspoon kosher salt
1/8 teaspoon ground cumin
Dash of crushed red pepper
1 (7-oz.) container plain 2% reduced-fat Greek yogurt
1 garlic clove, grated

Steps:

  • Combine all ingredients in a small bowl. Cover and chill 30 minutes to 1 hour.

I use this sauce multiple ways; with Moroccan cuisine, as a salad dressing, a dip, an accompaniment for pork, lamb or curries and as a condiment on gyros and other pita sandwiches. It's especially good with spicy dishes. A healthy and very versatile sauce! The preserved lemon is optional but I love it. I have posted a recipe for Moroccan Preserved Lemon on Just A Pinch. It's very easy to make.

Transfer to a spice grinder and process until fine. Add the cinnamon, oregano, ginger and salt. Season the beef with your Moroccan rub. Mash the seasoning well in to the meat liberally. Place the tri-tip on a roasting rack. Cook at 375 degrees, preferably in a convection oven. Check Temp and remove at 140F. for medium rare. Let beef rest for 20 minutes.     2. Use a microplane to finely grate the zest of half a lemon onto the board, then transfer to the bowl.
