There couldn't be a better way to prepare freshly caught wild brook trout. Serve with a side of creamy mashed potatoes and steamed Swiss chard.

4 whole (12 ounce) trout, cleaned with tails and heads on
½ cup all-purpose flour
½ cup cornmeal
? teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
2 lemons - cut into wedges, for garnish

Steps:

  • Remove gills from fish and discard. Rinse fish under cold water.
  • In a large skillet heat oil over medium heat.
  • In shallow dish, combine the flour, cornmeal, salt and pepper. Raise heat to high. Dredge fish in flour mixture and fry in hot oil for about 4 to 6 minutes on each side or until meat flakes with a fork. Serve garnished with lemon wedges.

    1. Preheat the oven to 180°C/350°F/gas 4.
    2. Peel the onion and finely slice with the tomatoes and lemon. Roughly chop the dill and parsley (stalks and all).
    3. Drizzle a large baking tray with oil, scatter over a third of the sliced tomato, lemon and herbs, then top with the fish, seasoning the cavity and skin with sea salt and black pepper.
    4. Stuff the cavity with another third of the sliced tomato, lemon and herbs, then scatter the remaining third over the top – arranging a few tomatoes around the fish. Dot with butter, then drizzle all over with 2 tablespoons of oil and a twist of black pepper.
    5. Roast for 25 minutes, or until just cooked through. Delicious served with samphire.

  • 1. Heat oven to 180°C. Season the trout cavity with salt and pepper and drizzle with 1 tbsp oil. Lay the lemon slices inside across the cavity of the fish. Stuff with half the thyme and parsley.

    2. Using kitchen string, firmly tie the trout crosswise about 4 times, spacing evenly along the fish, tying and knotting loose ends

    3. Pick leaves from remaining thyme and parsley and chop. Mix herbs with remaining oil and some seasoning. Rub mixture over the outside of the fish, and then transfer to a roasting tray lined with baking paper.

    4. Bake trout for about 35-40 minutes. Remove from the oven, cover with foil and rest for about 10 minutes. Serve whole at the table.

    Serve with Neil's sweet potato, garlic and rosemary gratin (to balance the lemon zing).
