- Preheat the oven to 325 degrees F.
- Put the pecan halves on a baking sheet in a single layer and bake, shaking the sheet once halfway through, until lightly toasted, 5 to 6 minutes. Transfer the nuts to a plate to cool.
- Line the baking sheet with parchment paper or a silicone baking mat. Arrange the pretzels neatly on the baking sheet, then top each pretzel with an unwrapped caramel. Bake until the caramels soften (but are definitely not melting), 4 to 5 minutes. Remove the baking sheet from the oven and gently press a pecan half onto each caramel, just enough for the caramel to fill the pretzel. Set aside to cool completely.
- Remove the cooled pretzel/caramels from the baking sheet. Spoon 24 small dollops (1 1/2-teaspoon helpings) of the melted chocolate all over the baking sheet, then lightly drop a pretzel onto the middle of each dollop, making sure the pretzel is centered. Allow them to cool completely before serving (you can hasten this along in the fridge).

- In a large heavy saucepan, combine sugar, corn syrup and butter; bring just to a boil over medium heat, stirring constantly. Boil, without stirring, 4 minutes. Remove from heat; stir in milk. Cook and stir over medium-low heat until a candy thermometer reads 245° (firm-ball stage). Keep warm. , Pour 2 cups caramel mixture into a 2-cup glass measuring cup. Quickly dip each pretzel halfway into caramel; allow excess to drip off. Place on well-buttered baking sheets; let stand until firm. (Rewarm caramel mixture and replenish as needed.), In a microwave, melt white candy coating; stir until smooth. Dip half of the caramel-dipped pretzels into the white coating; return to baking sheets. Melt milk chocolate coating; dip remaining pretzels; place on baking sheets., Drizzle white-dipped pretzels with milk chocolate coating; drizzle milk chocolate-dipped pretzels with white coating. If desired, sprinkle with walnuts. Store in airtight containers.

- Line a cookie sheet with parchment paper, Melt 8 ounces of chocolate whether on the stove or in the microwave, on low, stirring frequently, when melted and smooth, spread into a "rectangle shape" on prepared pan. Press pretzels into the warm chocolate, it's okay to let them overlap. Unwrap and melt caramels with about 2 Tablespoons of water. Again you can do this on the stove or in the microwave. Just make sure you are stirring frequently. When caramels are melted and smooth pour them over the pretzels. Melt remaining 4 ounces of chocolate chips and drizzle over caramel and sprinkle with sea salt. Place in the refrigerator until caramel and chocolate are set. Break or cut into pieces.

In a large glass measuring cup, microwave caramels and water on high until caramels are melted, stirring every minute., Dip three-fourths of each pretzel into caramel, allowing excess to drip off. (Reheat caramel in microwave if mixture becomes too thick for dipping.) Roll in almonds. Place on waxed paper until set. , In a microwave, melt white baking chips; stir until smooth. Dip half of the caramel-coated pretzels in white baking chips, allowing excess to drip off. Add sprinkles if desired; return to waxed paper to set. Repeat with chocolate chips and remaining pretzels., Store in airtight containers or wrap in cellophane gift bags and tie with ribbon.

I made these for co-workers and family members during the holidays, and put some in gift baskets for Christmas. You can make them for any of the holidays, by just using different holiday jimmies and candies... I wrapped in green and red saran wrap and tied with a coordinating ribbon for Christmas. They look pretty enough to put on top of Christmas presents or packages, use as party favors for kids, or as a place setting using a name tag tied with a ribbon to each one, so the kids know where their seats are. I have dipped them in caramel and then chocolate and sprinkled with nuts and M&M's. I have also used chopped candy bars such as Butterfingers. You could even use the little cinnamon hot red candies for Valentine's Day! Or put those cute candy hearts with the little sayings down the front with some sprinkles. The sky is the limit. Use your imagination, and I am sure they will work fine for you too. Great to do as a fun day with the kiddies too!
