This chicken soup recipe – as featured in Pride and Prejudice – is rich in flavour but beautiful in its understatement.

Number Of Ingredients 15

900g veal or beef bones (from butcher’s shops), chopped
1 small free-range chicken
400g piece British free-range unsmoked bacon, cut into chunks
6 black peppercorns
Bouquet garni (or a bundle of fresh herbs such as thyme, parsley, bay leaf, marjoram)
Pared zest ½ lemon
1 large onion, chopped
2 celery sticks, chopped
3 mace blades
To thicken:
125g blanched almonds
600ml double cream
1 thick stale bread slice, whizzed into breadcrumbs
Lemon zest strip
1 mace blade, crushed to a powder

Steps:

  • Put the bones, whole chicken and bacon chunks into a large pan, then add the peppercorns, herbs, lemon zest, onion, celery and mace. Cover with water, then bring to a boil, skimming off any scum. reduce the heat, then simmer very gently for 2½ hours.
  • Remove the chicken and set aside, then strain the stock through a fine sieve (discard flavourings) and cool (overnight if possible).
  • When cool, skim off the fat, then return about 700ml stock to a clean pan and heat gently.
  • Pound the almonds in a pestle and mortar with 2 tbsp cold water to make a coarse paste (or pulse in a small food processor). Put the cream in a pan and add the almonds, bread, lemon zest and powdered mace. Bring to the boil, simmer for 1-2 minutes, then add to the pan of stock. Simmer for 2 minutes, then strain again, pressing with the back of a spoon. Shred the meat from the reserved chicken, then add to the soup to warm through. Serve simply, with a little bread if you like.

2 pieces chicken fillet cubed
1 onion finely sliced
1 teaspoon whole Jeeru (Cumin)
1 teaspoon white pepper
Few cracks of coarse pepper
1 teaspoon chicken spice
1 teaspoon dried parsley
1 teaspoon dried mixed herb
2 teaspoon garlic paste
1 teaspoon green chilli paste
2 tablespoons ghee (Clarified butter)
2 tablespoons butter
1 packet knor cream of chicken soup
1 packet knor mushroom soup
1 tin cream Style corn
2 cups milk
1 cup fresh cream
¼ cup chopped finely fresh Dhana
Handful green onions

Steps:

  • Method: 1.)place the chicken cubes in a bowl with the pepper, garlic, chicken spice, green chilli , dried herbs and parsley and mix in. Marinate and set aside. 2.) combine the mushroom and chicken soups in a bowl and add in 2 cups of cold water and whisk until smooth. Set aside 3.) fry onions with whole cumin in ghee and butter until softened. 4.) add in the chicken and mix and fry on high for a few min, add in 1/4 cup water and cook until chicken is tender. 5.) add in the cream style corn and mix in and let it cook for 10-15 minutes. 6.) whisk the soups one more time to ensure no lumps and pour into the pot and stir, add in the 2 cups of milk and another cup of water and bring to hen boil. 7.) add in more water or milk If the desired consistency wanted is thinner. 8.) simmer on low for 15 minutes, remove from heat and stir in the cream. Top with greens and serve hot with bread.
